Lemon Parmesan Chicken and Zucchini
Sometimes you just need a quick, delicious, and healthy dinner and this Lemon Parmesan Chicken and Zucchini recipe is a great way to do that.
The fresh zucchini and lemon accent themselves wonderfully along with the chicken breast chunks. Even though this is a healthy meal, it will be super filling and refreshing!
You can even prep most of the meal ahead of time, throw it together when you are ready to eat and cut down on the amount of time it takes to make dinner even more.
Ingredients and Supplies You’ll Need to Make Lemon Parmesan Chicken and Zucchini in the Air Fryer:
Ingredients:
- Olive oil
- Boneless chicken breast or thighs
- Zucchini
- Fresh lemon juice
- Soy sauce
- Dried basil
- Dried oregano
- Salt
- Pepper
- Garlic powder
- Shredded Parmesan cheese
Supplies:
- Knife
- Cutting board
- Large mixing bowl
- Whisk
- Instant read thermometer (optional but great for making sure your meat reaches the correct internal temperature)
- Air fryer (Cosori Pro II)
What temperature should the chicken get?
When you are cooking chicken in the air fryer, it is important to make sure that you are cooking the chicken long enough to reach the correct internal temperature to consume the chicken.
To temp chicken, make sure to check the thickest part of the chicken and make sure it reaches at least 165 degrees F or 74 degrees C.
Does the chicken need time to marinate?
Ideally, yes the chicken should sit in the delicious lemon marinate for at least an hour in the fridge for the flavor to seep into the layers of chicken.
However, if you can let it sit for longer that is even better! The more time the better the flavor.
How to Make Lemon Parmesan Chicken and Zucchini in the Air Frye:
Step 1: Prep the chicken and zucchini
When you are ready to marinate the chicken begin by dicing the chicken breast and zucchini into bite-size pieces.
Step 2: Make the marinade
Make the marinade by whisking together 1 tbsp oil, 2 tbsp lemon juice, 1 tbsp soy sauce, 1 tsp dried basil, 1 tsp dried oregano.
Once the marinade is mixed up, combine the marinade with the chicken and zucchini and let it rest for at least 1 hour but up to 24 hours.
Feel free to prep this the night before!
Step 3: Cook the marinated lemon chicken
After the chicken is done marinating place it in air fryer basket and then generously season it with salt, pepper, and garlic powder to taste.
Once the chicken is seasoned, cook it at 380 degrees F or 193 degrees C for 10 minutes. Chicken will be done once it reaches internal temp of 165 degrees F or 74 degrees C.
Step 4: Finish the chicken
When the chicken has reached the desired internal temperature, open up the air fryer basket and sprinkle parmesan cheese on top of the chicken and place the basket back inside the warm air fryer to let to cheese melt, but do not turn the air fryer on.
After the cheese has melted to your liking, remove move the chicken and zucchini and enjoy!

Equipment
- Knife
- Cutting board
- Large mixing bowl
Ingredients
- 1 tbsp Olive oil
- 1.5 lbs Boneless, skinless chicken breasts or thighs
- 3 Zucchini small (about 1lb)
- 2 tbsp Fresh lemon juice
- 1 tbsp Soy sauce
- 1 tsp Dried basil
- ¼ tsp Dried oregano
- Salt, pepper, garlic powder to taste
- ½ cup Shredded Parmesan cheese
Instructions
- Dice chicken breast and zucchini into bite size pieces.
- Make the marinade by whisking together 1 tbsp oil, 2 tbsp lemon juice, 1 tbsp soy sauce, 1 tsp dried basil, 1 tsp dried oregano. Combine the marinade with the chicken and zucchini and let it rest for at least 1 hour.
- Place in air fryer basket. Salt, pepper, and garlic powder to taste.
- Cook at 380 °F for 10 minutes. Chicken will be done once it reaches internal temp of 165F165 °F.
- Sprinkle parmesan cheese on top and place the basket back inside the warm air fryer to let to cheese melt, but do not turn the air fryer on.
- Remove and enjoy!
