If you are like me and are always trying to piece together the sides to a dinner at the last minute, well then you need this air fryer cornbread muffins recipe. It is simple to throw together and you will have a tasty side for dinner in less than 20 minutes. 

Plus, if I am being honest, I almost always have a box of Jiffy cornbread mix in my pantry and all the other ingredients to make the cornbread to it is an easy side to whip up and still use everything in my pantry. 

Ingredients and Supplies Needed for Air Fryer Cornbread Muffins:

Ingredients:

  • Box of Jiffy cornbread mix
  • Egg
  • Milk (small can of cream corn. This gives you some extra “texture” and flavor to the muffins.)

Supplies:

  • Air fryer
  • Silicone liners (ones like THESE will do!)
  • Small mixing bowl
  • Wooden spoon or spatula. 

 

Do I Need to Use Jiffy Mix?

For this cornbread recipe, we chose to use the box of Jiffy mix. However, if you have another recipe that you like, feel free to use that one! I would just watch the cooking time a bit since this recipe has been tested for the Jiffy mix. 

You could also use Once Upon A Chef’s cornbread muffin recipe and then use our way to bake it in the air fryer and cut down the cooking time by almost half! 

Why Do You Use Silicone Muffin Liners?

That is actually a great question! I love using silicone liners for the muffins because I know for sure that they can handle how the Cosori 5.8QT air fryer cooks. Not to mention,  as an added bonus they are reusable so there is also less waste and they come out of the silicone super easily! 

 

How to Make Air Fryer Cornbread Muffins:

Step 1: Mix Up the Dough

Begin by measuring out the ingredients on the box of the Jiffy corn muffin mix. 

Then combine them in a small mixing bowl and whisk them together until they are well combined. 

The batter might be a little lumpy and that is okay.  

 

Step 2: Fill the Cups or Liners

Fill the liners about ⅔ of the way full with the cornbread mixture. And then place them carefully into the air fryer leaving about an inch apart. 

 

Step 3: Bake the Cornbread Muffins

Once you have the muffin liners filled and in the air fryer basket, place the basket in the air fryer and bake them at 330F or 165C for 10 minutes or until they are no longer gooey on the inside. 

I would check them a minute or two before the time is up as some air fryers do cook a little differently. You might also have to add on a minute or two also.

Cornbread in any shape and form is a staple side dish in our house. It pairs so well with recipes because you get that sweet little kick and has great flavor.

Did I mention that it is also extremely simple to throw together too! You can make it complicated if you want, but all you truly need is a box of Jiffy mix and its ingredients and you are good to go!

Ingredients

  • 1 Box Jiffy Muffin Mix
  • 1 Egg
  • cup Milk*

Instructions

  • Make cornbread mixture according to package directions or according to the recipe you are following.
  • Fill silicone muffin liners about 2/3 way full with cornbread mixture.
  • Place in air fryer basket and cook at 330 °F for 10 minutes. Check on the muffins a couple minutes before cooking time is over to decide if you need to pull them out early or add more time.

Feel free to use your own favorite recipe with the baking instructions provided, just be sure to check on them towards the end so the muffins don't get burnt. 
*Viewer Ed recommends substituting a small can of cream corn in place of the milk.
This gives you some extra "texture" and flavor to the muffins.
