Easy S’mores Cookie Bars Recipe
Delicious S’mores Cookie Bars
Mmm. Soft, buttery, graham cracker-flavored cookie bars with smooth chocolate and gooey marshmallow layered throughout. I highly recommend you try this s’mores cookie bars recipe!
Just like with the s’mores cookie cups, I think these s’mores cookie bars are even better than your average s’more. Plus, there’s no need for a fire and these bars are easy to make and serve to large groups or give to friends. S’mores bars for everyone! Gotta love cookie bars!
The easiest way to make graham cracker crumbs:
Just throw some graham crackers in a food processor or blender for quick and easy graham cracker crumbs. I believe it usually takes 7 to 8 whole graham crackers for 1 cup of crumbs. Of course, you can always go the good old rolling pin route. Throw the crackers in a gallon bag, then crush them by rolling over them with a rolling pin, flipping the bag every now and then, until evenly crushed.
Can I use regular marshmallows?
Do not substitute marshmallows for the marshmallow creme! The marshmallows will basically melt and disappear in the oven, while the creme stays perfectly soft and gooey.
Don’t worry, if you’re not familiar with marshmallow creme, you can easily find it right by the marshmallows. It’s cheap and easy! And these cookie bars are totally worth it! Trust me.
How to prepare your s’more cookie bars for the oven:
Press half of the cookie dough into the bottom of a foil-lined 9×13 pan, then layer on the marshmallow creme, then the chocolate chips. I decided to use milk chocolate chips to stay true to traditional s’mores flavor, but you can use whatever kind you like. (Guittard milk chocolate chips are my fav!)
Top it all off with the rest of the cookie dough in clumps. Bake it up and enjoy! Such an easy and delicious treat!

Easy S'mores Cookie Bars Recipe
Equipment
- 9x13-inch pan
- Medium bowl
- Large bowl
Ingredients
- 2 cups all-purpose flour
- 2 cups graham cracker crumbs
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 16 tablespoons 2 sticks butter, room temperature
- 1 ½ cups packed light brown sugar
- 1 teaspoon vanilla
- 2 large eggs
- 7 ounce container marshmallow topping - Marshmallow Fluff or Creme
- 2 cups milk or semisweet chocolate chips
Instructions
- Preheat the oven to 350. Line a 9X13-inch pan with foil, leaving a 2-inch overhang on the 2 short sides. Grease the foil with cooking spray and set aside.
- In a medium bowl, whisk together the flour, graham cracker crumbs, baking powder and salt.
- In a large bowl, using an electric mixer on medium speed, beat the butter and sugar until light, about 2 minutes. Beat in the eggs and vanilla until well combined. Reduce the mixer speed to low and add the flour mixture, mixing just until combined.
- Divide the dough in half. Press half into the bottom of the prepared pan until the dough is evenly flattened.
- Dollop the marshmallow topping on top of the cookie base and gently spread into an even layer. Sprinkle the chocolate chips on top.
- Scatter the remaining dough over the top in clumps. Don’t worry about completely covering the top.
- Bake the bars until golden brown, about 30-32 minutes. Cool completely. Remove from the pan with the foil, cut into bars, and serve.

Could I use Hershey bars (broken up) in place of the chocolate chips?

I made these today, 3 batches actually, for a soccer dinner and Boy Scouts but the recipe says 2 cups of marshmallow cream with “about 7 oz” in parentheses but 2 cups is 16 oz so I’m very confused. I made them both ways and have to get one back away so I couldn’t compare and wanted to be sure I have the recipe right for next time 😊

I’m so sorry for the confusion, Dorothy! I have updated the recipe to say “7 ounce container” to hopefully help clear that up. I get about 2 cups out of a 7-ounce container of marshmallow creme. Hope that helps!

Do these freeze well?
I haven’t tried freezing these, so I’m not sure about this recipe specifically. But, cookies tend to freeze well for up to two months. Make sure they are completely cooled off. Then, store them in an air tight container lined with aluminum foil or plastic food wrap.
