I was walking around Albertsons picking up the things on my list when a nice display of fresh asparagus caught my eye. I decided to pick some up and figure out how to use it when I got home. 😉 Sometimes I eat scrambled eggs for a quick lunch, so this was a perfect recipe for me to try out! And I love the fresh veggies in there!

Before you get to the asparagus though, you need to get the eggs all ready to go. In a medium bowl, whisk together the eggs and I Can’t Believe It’s Not Butter for about two minutes. You will still be able to see little bits of the I Can’t Believe It’s Not Butter and that’s okay. Then add the Swiss cheese and green onion.

Because I want to make sure the asparagus was tender-crisp for the eggs, I cook it with one tablespoon of I Can’t Believe It’s Not Butter for a few minutes in a skillet first. It works – the asparagus is just right! Then it is time to add the egg mixture and finish cooking it all together. Easy peasy.

Fluffy Scrambled Eggs with Asparagus

Ingredients

  • 1 1/2 tablespoons I Can’t Believe It’s Not Butter, divided
  • 2 large eggs
  • 1 tablespoon sliced green onion
  • 1/4 cup shredded Swiss cheese
  • 4 stalks asparagus (about 1 inch of bottom stem removed), cut into 1- to 2-inch pieces

Instructions

  1. In a medium bowl, whisk together 1/2 tablespoon of I Can’t Believe It’s Not Butter and the eggs for about 2 minutes. Then stir in the Swiss cheese and green onion.
  2. In a 10-inch nonstick skillet, add 1 tablespoon of I Can’t Believe It’s Not Butter and the asparagus. Cook on medium high heat for 2 or 3 minutes, stirring frequently, until crisp-tender.
  3. Add the egg mixture to the skillet, reduce heat to low and cook, stirring frequently, until eggs are thoroughly cooked, about 2 minutes. Season with salt and pepper.

Notes

For 2 servings, simple double all ingredients.
