Fudgy Chocolate Chip Cookie Bars Recipe

If you love a good cookie bar… and chocolate, you’ll love these impressive but easy treats.
I was asked to bring a dessert to a luncheon the other day and I really wanted to do cookie bars because they are easy to make in large quantities, easy to eat, and there are lots of delicious possibilities. I already have some recipes that I love, but I wanted to try something new. So, I used the perfect chocolate chip cookie bar recipe and added an easy fudgy filling. I was a little worried about if they would turn out, but apparently, I should’ve made more! They disappeared fast and a few people even asked for the recipe!
I added less toffee than some other recipes because I didn’t want it to steal the show. I’m pretty happy with the way mine turned out with just the slight toffee flavor among the other delicious flavors. But I’m sure you could leave the toffee out too and it would still be good.

Fudgy Chocolate Chip Cookie Bars Recipe
Ingredients
Chocolate Chip Cookie Layer
- 12 Tbsp unsalted butter 1 1/2 sticks, melted and slightly cooled
- 1 cup packed light brown sugar
- ½ cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 2 tsp vanilla
- 2 ⅛ cups all-purpose flour 1/8 c = 2 Tbsp
- ½ tsp salt
- ½ tsp baking soda
- 1 ½ - 2 cup chocolate chips
- ¼ cup toffee bits
Fudge Filling
- 14 ounce can sweetened condensed milk
- 2 cups semi-sweet chocolate chips
- 1 tablespoon butter
- ¼ cup toffee bits
Instructions
- Preheat the oven to 350°F/175°C
- Line a 9x13 pan with foil and lightly coat the foil with nonstick cooking spray.
- Set aside.
- For the cookie layer: Whisk the melted butter and sugars in a large bowl until combined.
- Add the egg, egg yolk, and vanilla and mix well.
- Add the flour, salt and baking soda, folding into the dough with a rubber spatula; do not over mix.
- Fold in the chocolate chips until combined.
- Use lightly moistened hands to press half of the dough into a thin even layer in the prepared pan, filling in any holes with a bit of cookie dough from the bowl.
- For the fudge filling: In a microwaveable bowl, combine the sweetened condensed milk, chocolate chips, and butter.
- Microwave for 1 minute at 50% power.
- Stir.
- Microwave for another minute and stir.
- If needed, repeat until the mixture is smooth and melted together.
- Pour the fudge mixture over the layer of cookie dough in the pan.
- Spread evenly.
- Sprinkle with toffee bits.
- Using the remaining cookie dough, flatten tablespoon sized amounts of cookie dough in your hands into flat disc shapes, about 1/8- to 1/4-inch thick.
- Place these discs over the top of the fudge layer.
- The top doesn't need to be completely covered, just make sure it is mostly covered with cookie dough.
- Sprinkle evenly with toffee bits.
- Bake the bars for about 35 minutes, until very lightly browned on the edges. Let cool completely on a wire rack.
- Cut into squares and serve.
