Although there have been debates on whether or not breakfast really is the most important meal of the day, I personally love my morning mealtime! A nice, healthy, nutritious meal to start the day is something I always look forward to. Maybe you’re the same way.
Maybe you’re also like me in that you don’t always have time to prepare a fancy breakfast. You know you should, but sometimes it’s easier to just pour a bowl of cereal! That can work for most days, but in the summertime, a good breakfast can really help you keep your energy levels up for activities and fun in the sun.

This is one of my favorite camping recipes but it can be made at home too. Whichever reheating method you chose (campfire or oven/microwave), you end up with a super easy and convenient breakfast burrito that is PACKED with nutritious ingredients. It’s not what I’d consider a light breakfast, but it will keep you fueled for hours.

If you’re craving french toast but you don’t have time to make your favorite recipe, here’s a quick and easy solution. French toast in a mug! Just as delicious and takes a fraction of the time.
3. Air Fryer Brussels Sprouts with Bacon & Maple Syrup
Brussels sprouts probably aren’t the first things that come to your mind when you think of summer breakfast ideas, but stick with me for a second. Although Brussels sprouts aren’t the most popular veggies around, they are extremely good for you, and this recipe does them right.
The air fryer gets the sprouts nice and crispy and with the bacon and maple syrup added in, you get a nice flavorful dish with great texture. Even if you dislike Brussels sprouts, give this recipe a try. You might be surprised!
4. Easy Whole Wheat Blender Pancakes
Here’s a quick and healthy pancake recipe that doesn’t resort to store-bought pancake mix! Being able to make these in the blender is so convenient too.

Breakfast sandwiches are one of my favorite options for a convenient breakfast, but a lot of them aren’t always the healthiest. This recipe uses extra-lean turkey bacon, fat-free cheese, egg white, and whole wheat bread to solve that problem! It’s super quick and easy too.

If you’re just looking for something small to get you going for the day, these homemade biscuits are a great option. They’re freezer friendly too! Top them with your favorites and enjoy!
7. Healthy Pina Colada Smoothie
Smoothies are definitely a go-to when it comes to summer breakfast ideas. They’re terrific on-the-go options and they’re super refreshing.

I’m a big fan of waffles but they’re typically not something I can eat every day. They’re more of a breakfast treat. These banana quinoa waffles still aren’t the healthiest, but they are quite a bit more nutritious than regular Belgium waffles.

Omelets are the ultimate customizable and healthy breakfast. You can top them and fill them with all your favorites! For this recipe I used cheddar cheese, tomato, green pepper, green onion, and bacon. You could add spinach, different cheeses, avocado, there are tons of options! The method used for this recipe makes omelet making really easy too.
