Pina Colada Smoothie Recipe with Coconut Milk

This healthy pina colada smoothie recipe is awesome! Only a few ingredients are needed for it and the spinach is undetectable (well, except for the color).

The pineapple is so sweet and delicious that the smoothie doesn’t need any additional sweeteners. Even my picky kids love this green smoothie recipe!

Coconut Milk Tips

Leftover canned coconut milk lasts up to 1 week in the refrigerator and up to 1 month in the freezer.

FYI – To use frozen coconut milk for other types of recipes: thaw, use an immersion blender for about 30 seconds to re-emulsify, then use as directed. For a smoothie recipe, there’s no need to re-emulsify the coconut milk though!

The pineapple flavor is the star of this smoothie. For a little more coconut flavor, blend in the unsweetened coconut flakes.

I love these healthy ingredients!

  • Pineapple is rich in vitamin C, manganese, bromelain (an enzyme), and antioxidants.
  • Spinach is loaded with fiber, vitamins, iron, magnesium, and many other good things!
  • Canned coconut milk is a good source of healthy fat, iron, magnesium, and potassium.

So much goodness!

Freezer Tips

This pina colada smoothie recipe is already pretty easy to make, but you can make it even faster by prepping it in advance. All you need are some freezer bags!

To make the freezer smoothies, just throw the ingredients – minus the water – into a resealable freezer bag and store it in the freezer for up to 1 month. Coconut milk can be frozen in an ice cube tray, as long as you keep track of how many equal 1 cup.

When you want to make a smoothie, remove the ingredients from the freezer, add them to your blender, add water, and blend. You may need to let the ingredients thaw slightly in order to remove them from the bag and depending on the power of your blender.

Ingredients

  • 2 cups fresh baby spinach
  • 1 cup canned unsweetened coconut milk lite or regular
  • 1 cup water
  • 3 cups frozen pineapple chunks
  • 2 tablespoons unsweetened coconut flakes optional

Instructions

  • Add spinach, coconut milk, water, and coconut flakes (if using) to a blender and blend until smooth. Add pineapple and blend until smooth.

Recipe Notes

If too thick, add small amounts of more water or coconut milk until reaches desired consistency.
