Although there have been debates on whether or not breakfast really is the most important meal of the day, I personally love my morning mealtime! A nice, healthy, nutritious meal to start the day is something I always look forward to. Maybe you’re the same way.

Maybe you’re also like me in that you don’t always have time to prepare a fancy breakfast. You know you should, but sometimes it’s easier to just pour a bowl of cereal! That can work for most days, but in the summertime, a good breakfast can really help you keep your energy levels up for activities and fun in the sun.

The summer breakfast recipes below are perfect for getting your day started right. We’ve included a variety of meals to suit all tastebuds, preferences, and time restraints!

1. Make-Ahead Breakfast Burritos

This is one of my favorite camping recipes but it can be made at home too. Whichever reheating method you chose (campfire or oven/microwave), you end up with a super easy and convenient breakfast burrito that is PACKED with nutritious ingredients. It’s not what I’d consider a light breakfast, but it will keep you fueled for hours.

2. Quick 5-Minute French Toast in a Mug

If you’re craving french toast but you don’t have time to make your favorite recipe, here’s a quick and easy solution. French toast in a mug! Just as delicious and takes a fraction of the time.

3. Air Fryer Brussels Sprouts with Bacon & Maple Syrup

Brussels sprouts probably aren’t the first things that come to your mind when you think of summer breakfast ideas, but stick with me for a second. Although Brussels sprouts aren’t the most popular veggies around, they are extremely good for you, and this recipe does them right.

The air fryer gets the sprouts nice and crispy and with the bacon and maple syrup added in, you get a nice flavorful dish with great texture. Even if you dislike Brussels sprouts, give this recipe a try. You might be surprised!

4. Easy Whole Wheat Blender Pancakes

Here’s a quick and healthy pancake recipe that doesn’t resort to store-bought pancake mix! Being able to make these in the blender is so convenient too.

5. Healthy Bacon, Egg & Cheese Sandwich

Breakfast sandwiches are one of my favorite options for a convenient breakfast, but a lot of them aren’t always the healthiest. This recipe uses extra-lean turkey bacon, fat-free cheese, egg white, and whole wheat bread to solve that problem! It’s super quick and easy too.

6. Simple Make-Ahead Biscuits

If you’re just looking for something small to get you going for the day, these homemade biscuits are a great option. They’re freezer friendly too! Top them with your favorites and enjoy!

7. Healthy Pina Colada Smoothie

Smoothies are definitely a go-to when it comes to summer breakfast ideas. They’re terrific on-the-go options and they’re super refreshing.

This specific recipe is loaded with nutrients. It contains spinach as the main power food, with pineapple chunks and coconut milk in there for even more nutrients and flavor.

8. The Best Green Smoothie

Here’s another green smoothie option that’s going to be better for you if you prefer a bit more flavor. This one still has spinach, but also banana, peanut butter, vanilla Greek yogurt, and vanilla almond milk. It’s an all-around fantastic energy booster!

9. Healthy Homemade Granola

Store-bought granola can be good, but homemade is the way to go. You can control each ingredient that goes into it to keep it healthy AND perfectly suited to your taste buds. It’s easier than you might think too!

Once you’ve made your own batch, you can store it in an airtight container and eat it on its own, with milk or yogurt, in a smoothie, or something else.

If you still prefer the taste and texture of a regular pancake but you like the idea of hands-off, oven-baked cooking, here’s the solution! Baked pancake squares are one of my go-to summer breakfasts because they’re light and fluffy, quick to make, freezable, and SO  delicious.

You might think of asparagus as a dinner vegetable, but just wait until you try it with fluffy scrambled eggs. This is an extremely healthy breakfast option that won’t weigh you down!

Breakfast pizza is one of the more unorthodox summer breakfast ideas on this list, but it’s a must-try! You get some greens, cheese, bacon, eggs, and more, all on a delicious crispy crust. It’s fantastic.

If you’re more of an on-the-go breakfast eater and you prefer something light and healthy, these low carb blueberry muffins are a perfect choice. They’re easy to make too. You could easily prepare a batch every few days or so and then keep them in a container for quick snacking.

19. Nutritious Banana Quinoa Waffles

I’m a big fan of waffles but they’re typically not something I can eat every day. They’re more of a breakfast treat. These banana quinoa waffles still aren’t the healthiest, but they are quite a bit more nutritious than regular Belgium waffles.

20. Easy Baked Omelet Roll-Up

Omelets are the ultimate customizable and healthy breakfast. You can top them and fill them with all your favorites! For this recipe I used cheddar cheese, tomato, green pepper, green onion, and bacon. You could add spinach, different cheeses, avocado, there are tons of options! The method used for this recipe makes omelet making really easy too.
