A Healthy Breakfast Sandwich Recipe

I love breakfast sandwiches! They can be so simple and so very delicious! However, a lot of breakfast sandwiches are full of fat, carbs, and calories. This makes them really tasty, but not so healthy.

Now, I will admit that I love having a good biscuit or croissant breakfast sandwich with sausage, egg, and cheese every now and then, but I definitely couldn’t have one every day. That’s why this healthy breakfast sandwich recipe is so awesome!

A sandwich like this can actually be a great option for breakfast, even on a regular basis. The ingredients are a lot healthier so you can feel good eating it, and the flavor is still amazing. It probably even has fewer calories than your cold cereal. (That obviously depends on the cereal, but it usually takes about 2 servings to fill up my bowl!)

Ingredients

Using a bit of lean turkey bacon, fat-free cheese, and an egg white keeps the fat in check in this recipe.

As for the bread, you can use a multi-grain or whole wheat English muffin as those are the healthier options. I used Thomas’ Light Multi-Grain English muffins and I like them. They actually have fewer calories than the whole wheat English muffins.

One of the best things about this healthy breakfast sandwich recipe is how easy and quick it is to make. I think the way the egg is cooked is one of the coolest things about it. Just spray the bowl, pour the egg white in, and microwave for about 45 seconds! Plus, it is the perfect shape and size for the sandwich. So easy!

I just used one of my 1-cup ramekins for the egg white, but you could also use a 6-ounce glass custard cup. I have some Pyrex custard cups that work well, or these Anchor Hocking ones would be great too.

Ingredients

  • 1 strip extra-lean turkey bacon cut in half cross-wise
  • olive oil spray
  • 1 large egg white
  • 1 light multigrain or whole wheat English muffin toasted
  • 1 slice fat-free yellow American cheese 3/4 oz

Instructions

  • Place a small nonstick skillet over medium-high heat and add the bacon. Cook for 2 to 3 minutes per side, or until crisp. Remove the pan and cover to keep warm.
  • Spray a 3.5-inch or 4-inch microwave-safe bowl with the olive oil spray and add the egg white. Microwave for 30 seconds. Continue the microwaving in 15-second intervals until it is just set completely.
  • Assemble the sandwich by topping the bottom half of the warm English muffin with the cheese, the egg, then the bacon. Add the English muffin top and serve.
