Quick and Easy Breakfast

Sometimes it is hard to get all the protein and vegetables you need in a day, but not when you start the day out with this Air Fryer Stuffed Bell Pepper Breakfast. 

This is a super simple breakfast to make and enjoy alone or make enough for the family by doubling or tripling the recipe depending on your family size.

There is no need to prep anything in advance, which is ideal for breakfast recipes, and you will still get a tasty and nutritious meal.  

 

Ingredients and Supplies You’ll Need to Make this Air Fryer Stuffed Bell Pepper Breakfast:

  • Bell pepper cut in half heightwise through the stem 
  • Eggs
  • Salt
  • Pepper
  • Cheese

How to cut the pepper for air fryer stuffed peppers

For this recipe, it is ideal to cut the pepper from the top down through the center of the pepper. Yes, that is including the stem as well. 

Normally, when you are prepping peppers to be eaten we will deseed the pepper and cut the stem off. 

However, for this recipe, you will still deseed the pepper but you will want to try and leave the stem on if you can. Leaving the stem on helps contain the egg whites from spilling out of the pepper. 

Once the pepper is cooked you can remove the stem and enjoy!

What type of cheese to use 

I am always a fan of using Monterrey jack cheese with this recipe, however, that is not the only option. Choose your favorite cheese or what you have available.  

Cheeses that will work great with stuffed peppers!

  • Pepper jack
  • Cheddar
  • Swiss
  • Mozzarella
  • Provolone

 

How to Make Air Fryer Stuffed Bell Pepper Breakfast:

Step 1: Prep the bell peppers

Begin by washing and drying the peppers. Then cut the bell peppers in half going through the stem all the way to the bottom.

Do this for each pepper and then place the bell peppers with the cut side up into the air fryer basket.

Step 2: Add the eggs 

After you have the bell peppers placed into the air fryer, crack one egg and carefully add it to the center of the bell pepper. 

Do this for each of the bell pepper halves.

Step 3: Cook the stuffed peppers 

When the eggs have been added, place the basket into the air fryer and turn it on to 380 degrees F or 193 degrees C and let them cook for 10-15 minutes or until the egg and peppers are roasted to your liking.

Step 4: Finish off the stuffed pepper breakfast 

Once the egg is cooked to your liking, open the air fryer and top it off with salt, pepper, and cheese and either continue to cook the stuffed pepper for 1-2 minutes for a broiled effect or just close the air fryer and let the remaining heat melt the cheese. 

Then just remove, season with salt and pepper to your liking, and enjoy!

  • Crack 1 egg into each pepper half.
  • Cook at 380 °F for 10-15 minutes, or until egg white is set and peppers are roasted to your liking.

Recipe Notes

Cut the pepper in half (heightwise aka through the stem) try to keep the stem on and deseed (keeping the stem on will keep the egg from leaking out).
