Healthy Baked Oatmeal Muffins To Go
Equipment
- Large bowl
Ingredients
- 2 cups unsweetened applesauce
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 banana mashed
- ½ cup honey
- 5 cups old fashioned rolled oats
- ¼ cup ground flax meal
- 1 tablespoon cinnamon
- 3 teaspoons baking powder
- 1 teaspoon salt
- 2 ¾ cups milk
- Toppings optional: chopped nuts, chocolate chips, fresh fruit, raisins, dried fruit
Instructions
- Preheat oven to 350°F/175°C.
- In a large bowl, mix together eggs, vanilla, applesauce, banana and honey. Add oats, flax, cinnamon, baking powder, salt and mix until well combined. Pour in milk and mix well.
- Lightly spray two 12-count muffin pans with cooking spray or use liners. Fill each muffin cup with batter. Add toppings. If you are using fresh or frozen fruit, you can drop it into the batter.
- Bake 30 minutes or until a toothpick comes out clean. Let cool slightly and serve warm, or let cool completely and transfer to gallon freezer bags to freeze for later.

Does anybody have a calorie count on these? They look delicious but I’m supposed to be counting, lol.
Any suggestions for substituting the bananas out?
I haven’t tried the recipe with a banana substitute, so I’m not sure how it will turn out! But you could try 1/2 cup more of applesauce as a substitute for the banana. Or I’ve heard that egg whites (or a whole egg) can also substitute for a banana in some baked goods. I hope it works out well for you!
