Veggies
- Zucchini
- Red pepper or yellow pepper
- Eggplant
- Small head of broccoli
- Red onion
Tomato sauce
- Canned tomato with chunks
- Salt
- Black pepper
- Dried basil to taste (or fresh)
Cheese topping
- Grated parmesan
- Breadcrumb
- Herbs de Provence or Italian seasoning to taste
Other
- Oil sprayer
- Mozzarella cheese

You can keep this recipe as is or serve it over top of baked pasta as a healthy veggie-filled sauce. You can also chop up some chicken breasts, and cook them for 3-5 minutes before adding the vegetables to the air fryer to add even more protein to this recipe.

Keep this recipe simple if you want by using vegetables from the freezer or prepare and chop your own. The recipe has a great combination, but feel free to add any of these as well:

How to make this Air Fryer Veggie Bake:
Step 1: Prepare the veggies
Begin by washing and chopping the veggies into bite-size pieces.
Note that for the broccoli florets, after washing and chopping, place in a small bowl and add a little water. Microwave for 2 minutes to slightly cook. This will make it so the broccoli doesn’t dry out while air frying.
Step 2: First air fry
Once you have the vegetables all prepared, spray the veggies with your olive oil sprayer and then air fry at 380 degrees F or 193 degrees C for 10 minutes.
Step 3: Prepare the veggie seasoning
While the vegetables are cooking, toss together 1/2 cup grated parmesan cheese, 1/4 cup breadcrumbs, and Herbes de Provence spices or Italian seasoning to taste.
Step 4: Make tomato sauce
Then in a separate mixing bowl, whisk together the tomato sauce with salt, pepper, and basil.
Step 5: Finish baking vegetables
When the vegetables are done cooking for 10 minutes, sprinkle a little parmesan onto the vegetable mixture, then add the tomato mixture on top.
After adding the sauce, air fry everything at 380 degrees F or 193 degrees C for 3 minutes.
Step 6: Final bake
Open the air fryer and sprinkle on mozzarella cheese to your taste and then continue to air fry at 380 degrees F or 193 degrees C for another 2-3 minutes or until cheese is melted to your liking.

- 1 cup canned tomato with chunks
- salt to taste
- pepper to taste
- dried basil to taste (or fresh)

- ½ cup grated parmesan
- ¼ cup breadcrumb
- herbs de provence or italian seasoning to taste

- Mozzarella cheese to taste
Instructions

- Then in a seperate bowl, mix together tomato sauce with salt, pepper, and basil.
- Sprinkle on the parmesan mixture, then add the tomato mixture.
- Air fry at 380 °F for 3 minutes.
- Sprinkle on mozzarella cheese to taste.
- Air fry at 380 °F for 2-3 minutes or until cheese is melted to liking
