Easy dinner, snack, or appetizer recipe – Keto Taco Bites!

When the whole family loves it – even the picky ones – it is a recipe worth getting excited about. Yes, this is a keto and low carb recipe, but anyone that likes tacos will like it! In fact, my kids that don’t like tacos, actually do like these mini keto taco bites. 😉 (ps – if you’re curious about the Ketogenic lifestyle, read this post Cathy wrote about why she decided to do the Keto Diet and her beginners tips for the Keto Diet!)

It is fast and easy to mix up your own homemade taco seasoning! I use this taco seasoning recipe all the time. It is nice to have control over what exactly is in there and it tastes good too.

This keto recipe calls for only four ingredients and they are simple ones too – cheese, eggs, ground beef, and taco seasoning. Even with such simple ingredients, the mini taco bites are surprisingly delicious! Adding a yummy taco garnish makes them even better, of course.

If you’re looking for a good deal on ground beef, check if Zaycon offers events in your area. I like ordering ground beef and chicken from them, especially when there’s a promotion going on.

The recipe yields about 36 mini taco bites, so if you only have one mini muffin pan, you may need to work in batches…unless your mini muffin pan is like mine. Yeah, I have what you might call a mega mini muffin pan. I can bake 48 mini muffins (or keto taco bites) at a time! Two mini muffin pans in one. Cool, right? Barely fits in my oven, but it DOES fit. 😉

If you don’t have a mini muffin pan, you can make these in regular muffin pans too… Cathy highly recommends that you use silicone cupcake liners with this recipe. It makes clean up a breeze and you don’t have to deal with muffin sticking to the pans or disposable paper liners!

These keto taco bites freeze well too! Freeze leftovers or make extra for a freezer meal, then just thaw and reheat. FYI – They heat up from frozen in the microwave just like chicken nuggets do, if you’re as familiar with frozen chicken nuggets as I am. 😉

Air Fryer Instructions

This recipe is super simple to make in the air fryer. You can follow the instructions up until cooking the taco bites in the oven. Or, another option is to cook the ground beef in the air fryer. Air fryer ground beef is incredibly easy. Learn how to cook ground beef in the air fryer in just 8 minutes.

Once your mixture is ready, place 9-10 silicone muffin liners, not the mini size, in the air fryer basket. Lightly spray with oil and add about a 1/4 cup of mixture to each. Cook at 330°F/165°C for 10 minutes. Top with cheese, and cook for an additional 3 minutes.

There you have it! Easy, peasy taco bites in the air fryer!

  • Preheat oven to 350°F/175°C. Prepare a mini muffin pan with cooking spray, melted butter, or mini muffin liners.
  • In a large skillet over medium heat, cook the ground beef until almost cooked through. Stir in the taco seasoning and finish cooking. Remove from heat and let cool.
  • In a large bowl, whisk the eggs, then whisk in the taco meat and 4 ounces (about 1 full cup) of the cheese. Fill the mini muffin cups about 3/4 full and sprinkle the remaining shredded cheese over the tops.
  • Bake for 15-20 minutes, until puffed and firm to the touch. Let cool in pan for about 10 minutes. Serve with your favorite taco toppings, like salsa, guacamole, olives, and/or sour cream.

Air Fryer Instructions

  • Cook ground beef in the air fryer: Crumble and spread apart beef in the air fryer basket. Cook at 380°F/190°C for 4 minutes. Stir the beef with a silicone spatula. Add taco seasoning. Cook at 350°F/175°C for 3 minutes.
  • Whisk eggs and add cheese. Add ground beef.
  • Place 9-10 silicone muffin liners in the air fryer basket. Add 1/4 cup of mixture to liners.
  • Cook at 330°F/165°C for 10 minutes. Top with cheese. Cook for an additional 3 minutes.
  • Let rest and enjoy.

  • OK, so if I don’t have mini muffin tins, just regular ones, how long do you think I should bake these? So excited to try them!

    • Good question. I would start at the same baking time (about 15 minutes), but be prepared for it to possibly take 5-10 minutes longer. Let me know how it goes when you try it! (You gotta get yourself a mega mini muffin pan, lady!) 😉

  • Oh man. Ok, I found some mini muffin tins from my mamma. 24 minis…. Gone in SECONDS! Holy cow these are crazy good! The second half of the mix went into the normal muffin tins and I filled them half full and baked them for 20 minutes and they are perfect!

  • Is the carb count for the whole thing or per serving? If by serving , is it 1 for serving?

    • The nutrition info is for serving size. I just changed it show yield of 36 and serving of 36. Obviously, you won’t be able to feed 36 people with just one mini muffin each, but it will show a more accurate nutrition info per mini muffin for you. I might need to change it back eventually, but it is showing less than 1 carb in each mini muffin.

  • This my “go-to” meal when traveling, at home during inclement weather, and sharing at girls night events. Honestly, it’s the easiest, most delicious meal in place of a protein shake! I’ve cooked them regular muffin size, and mini muffin size (I definitely have the mega mini muffin pan of 48 😜) I L-O-V-E IT!
