Almost any vegetable is better with cheese and bacon, right?! Of course. Anyway, I really like this side dish recipe for cheesy cauliflower with bacon. It is unique, easy, and delicious. And bacon. Need I say more?

Tender cauliflower covered in rich, creamy cheese sauce and sprinkled with crisp bacon….Yum! The bacon adds a bit of a smoky flavor and the parsley is a nice fresh addition. This side dish is different, but I hope you consider giving it a try. Most of the prep happens 4 to 6 hours before serving, so it is a great option for a make-ahead holiday dinner side dish!

The condensed cheese soup works perfectly for the base of this slow cooked cheese sauce. It stays creamy and holds up throughout the several hours of heat. Plus, it makes the sauce super easy to prepare!

This is the first time I have used a foil collar in a slow cooker! Apparently, most slow cookers have a hotter side and it is typically the back side, opposite of the controls. The foil collar helps prevent burning when slow cooking dense dishes like casseroles and meatloaves. Good to know!

Cheesy Cauliflower with Bacon Recipe

Serves: 8-10 servings

Ingredients

  • vegetable oil spray
  • 4 ounces raw bacon, minced
  • 1 (11-ounce) can condensed cheddar cheese soup
  • 1/4 cup water
  • 1/2 teaspoon pepper
  • 1/8 teaspoon salt
  • 2 cups cheddar cheese (8 ounces)
  • 2 heads cauliflower (4 pounds), cored and cut into 1-inch florets
  • salt and pepper
  • 1 tablespoon minced fresh parsley

Instructions

  1. Layer and fold sheets of heavy-duty foil until you have a 6-layered foil rectangle, about 16 inches long and 4 inches wide. Press this foil collar into the back side of the slow cooker, then coat the inside of the slow cooker with vegetable oil spray.
  2. Cook bacon in a large pot over medium heat until crisp, 5-7 minutes. Transfer bacon to paper towel-lined plate and refrigerate until serving. Pour off all bacon fat left in pot.
  3. Add condensed soup, water, pepper, and salt to the pot and bring to a simmer. Slowly whisk in 1 1/2 cups cheese until melted; stir in cauliflower and coat evenly with sauce.
  4. Transfer cauliflower mixture to prepared slow cooker and top with remaining 1/2 cup cheese. Cover and cook until cauliflower is tender, 4-6 hours on low.
  5. Remove foil collar, stir cauliflower well and season with salt and pepper to taste. Microwave bacon on plate until hot and crisp, about 30 seconds. Sprinkle bacon and parsley over cauliflower before serving.

Notes

This dish does not hold well on warm setting.
