Looking for a satisfying, flavorful green salad recipe? Look no further! This green salad is bursting with flavor thanks to the artichoke hearts, roasted red peppers, and zesty Italian vinaigrette dressing. Easy enough for any day, but tasty and pretty enough for a special occasion too.

Recently, I received an invite to a dinner party and it took me a while to make arrangements to be there. By the time I could RSVP, someone had already called bringing a dessert. (Their dessert was fantastic, by the way.) I was asked to bring a green salad with a vinaigrette-style dressing. I don’t know about you, but I get a lot more excited about making a decadent dessert than a green salad.

Making the best of it, I started searching for a green salad recipe that would hopefully be as impressive and enjoyable as a green salad can be. When I came upon this recipe, I knew it was the one. It would pair well with the pasta and garlic bread also being served. Simple and easy, but still above and beyond your ordinary green salad recipe!

I love the homemade copycat recipe for zesty Italian dressing too. Way better than a mix from a packet! Great flavor, easy to make, and delicious on lots of different green salads.

Green Salad Recipe with Homemade Zesty Italian Dressing

  • 1 head red leaf lettuce, chopped
  • 1 head Romaine lettuce, chopped
  • half small red onion, peeled and sliced thin
  • two 14-ounce cans quartered artichoke hearts, drained and roughly chopped
  • 12-ounce jar roasted red peppers, drained and diced
  • 1/2 cup toasted pine nuts
  • optional garnish: freshly-grated Parmesan
  • Zesty Italian Vinaigrette Dressing

  • 1/2 cup grated Parmesan cheese
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic powder


  1. In a large bowl, add all salad ingredients and toss to combine.
  2. For the dressing, whisk all ingredients together until combined. Pour over salad and toss to coat, or serve along side the salad.
  3. Serve immediately because the salad doesn't take long to get soggy! Garnish with freshly-grated Parmesan cheese, if desired.
