Mock Garlic Mashed Potatoes

Confession time: I don’t like Cauliflower.  At. All.  But I love Mock Garlic Mashed Potatoes!  They are so creamy and delicious.

This is my FAVORITE way (and pretty much my only way) to eat cauliflower.  I can seriously sit down and eat the whole thing it’s so yummy!!  And this is my least favorite veggie!!  Plus, it requires only about 10 minutes of actual work, which fits in well with my schedule!

Mock Mashed Potatoes Ingredients

Bonus: It only takes 5 Gluten Free ingredients!  Cauliflower, cream cheese, minced garlic, Parmesan cheese, and fresh black pepper.   I keep everything in stock except the cauliflower (because it’s fresh).  And seriously, if I kept cauliflower in the house all the time, I would never stop eating this.  It’s that good. Mock Garlic Mashed Potatoes

Start by prepping your cauliflower florets. Cut them into bite size pieces.  Make sure to wash it well, and then steam the clean florets.  I love my steamer.  I’ve had it since before I got married, and it just keeps on kicking!  To steam, fill bottom of pan with water, until just below the steamer basket (about an inch of water), and cook on high for 5 to 7 minutes.  Steam cauliflower florets until tender.

After steaming, pat dry quickly with a paper towel or a microfiber cloth.  I like the microfiber cloth because it helps keep the heat away from my hands while drying it.  Transfer the cauliflower to a food processor, and add in the cream cheese, Parmesan cheese, garlic, and black pepper.   I hope you’ll forgive me.  I didn’t take pictures of this, because we’ve had our food processor for about 5 years now.  It’s so out of date, you can’t even buy it anymore.  And it is WELL used.  And well melted.  🙂  But it’s a beast, and won’t stop running.

Process cauliflower and cheeses until smooth and serve warm.  It totally fills my 1 quart pyrex mixing bowl, with a bit extra to taste test.   We love this with any kind of meat (my favorite being my BFF’s steak… but alas, that’s a secret family recipe), but it’s great with a pasta too, because it doesn’t have the carby/starchiness of mashed potatoes. It’s also super filling, so works great for a side dish for a meatless meal!

I have doubled and tripled this recipe, you just have to slightly increase the steam time to make sure it’s all tender.

Bee Eating Mock Mashed Potatoes

I asked my daughter to wait to start eating so I could get a picture of her first reaction (we haven’t had these in a long time).  By the time I got my camera, she had finished off hers, and had started on mine.  This Mock Garlic Mashed Potatoes recipes is definitely kid approved!


  • 1 medium head cauliflower
  • 1/4 cup cream cheese, softened
  • 1 cup grated Parmesan
  • 3 cloves fresh minced garlic (1.5 tsp dried)
  • 1/8 teaspoon freshly ground black pepper
  • 1/2 teaspoon chopped fresh or dry chives, for garnish (optional)
  • 3 tablespoons unsalted butter (optional)


  1. Cut cauliflower into small pieces
  2. Steam cauliflower until very tender.
  3. Pat cauliflower dry, and place in food processor with the cream cheese, Parmesan, garlic, and pepper.
  4. Blend until almost smooth.
  5. Serve warm
