Easy Cheesy Bacon Biscuits

Spend 10 minutes or less preparing these yummy cheesy biscuits, let bake, and then enjoy! Great for brunch, breakfast, or a bread side for dinner.
I listed off a few recipes for my husband to choose from and this is the one he thought sounded the best for Father’s Day. Of course, right? Cheese, bacon, bread. Almost always a winning combination! This is really less of a recipe and more of an idea because it is so simple. Gotta love simple and easy!
If you don’t have a cast iron skillet, you can just use a small baking dish. Then all you need is a can of biscuits (or any other biscuit or bread dough you’d like to use), some cheese, cooked bacon pieces, and melted butter. You could really go wild with this combo and come up with all sorts of great ways to combine the bread, cheese, and bacon! Let me know if you come up with an awesome one.
With this recipe, you just brush the melted butter on the pan or baking dish, then layer it all on. Start with the biscuit dough, then one of the cheeses, the bacon deliciousness, and top it off with more cheese. You can use sliced cheese for the first cheese layer, if you want. And really, shredding or slicing your cheese from a block is ideal because it melts better. But I have a lot of shredded cheese in my freezer, so that is what I used! It’s all good.

Easy Cheesy Bacon Biscuits
Ingredients
- 2 tablespoons butter melted
- 1 can refrigerated biscuit dough 8 count
- 6 thin slices mozzarella cheese or 1 cup shredded
- 1 cup cooked crumbled bacon
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 350°F/175°C and brush a 10-inch cast iron skillet (or small baking dish) with melted butter.
- Unroll biscuits from can and place into the bottom of the skillet.
- Top evenly with mozzarella, bacon crumbles, and shredded cheese.
- Bake for 15-20 minutes, until cheese is melted and biscuits are cooked through.
- Serve warm.
