Easy and Quick Keto Donuts in the Air Fryer!

If you’re doing keto or just wanting to eat more low carb foods and still enjoy a treat, give these keto donuts a try! They are so easy and fast in the air fryer and the ingredients are pretty standard for low carb. You’ll be enjoying a donut in less than 30 minutes!

Keto Donut Ingredients

Whisk or sift the dry ingredients together to break up any lumps, aerate the mixture, and keep it nice and uniform. Nothing too crazy here – just almond flour, granulated erythritol, baking powder, xanthan gum, and salt.

If you have a kitchen scale, set the mixing bowl on it, tare, then add the almond flour, tare, then add the granulated erythritol according to the weights listed in the recipe. No measuring cups needed!

As far as granulated erythritol goes, I’ve used Swerve and Lakanto brands with great success. There are definitely other brands out there now too though! Your local grocery store may even have their own brand of erythritol.

The wet ingredients include eggs, melted coconut oil, almond milk, and liquid stevia. The liquid stevia adds just a little more sweetness without affecting the texture of the donut.

Room Temperature Eggs

To bring an egg to room temperature quickly, place the egg in a bowl and add warm water. Let the egg sit in the warm water while you gather the rest of the ingredients. It only takes a few minutes of sitting in the warm water to make a difference. The batter will mix better and more evenly as a result.

Donut Pan or Silicone Mold

For this keto donut recipe, we want the donut cavity to be about 3 inches in diameter and you want the pan or mold to fit in your air fryer. If you have a basket air fryer, like the Cosori 5.8 Qt, a mold for four 3-inch donuts will work.

I bought a donut mold for six 3-inch donuts and cut it to fit. It is also a good idea to cut a vent in the middle of the mold to help air circulate more evenly in the air fryer. Silicone donut molds are super affordable and easy to cut!

How Long to Cook Keto Donuts in the Air Fryer

These air fryer keto donuts are done in just 8 minutes! Of course, I recommend using a toothpick test to be sure. A few moist crumbs on the toothpick is fine, but you don’t want to see batter on it. Cooking time may vary depending on your air fryer and donut pan/mold.

Just so you know, some people experience a slight cooling sensation with granulated erythritol and some don’t. When it is used raw like this to coat the donut, I do get a bit of a cooling aftertaste, but it doesn’t bother me at all.

Cinnamon Sugar Coating

  • 4 tablespoons granulated erythritol
  • 1 ½ teaspoons cinnamon

Instructions

  • In a large bowl, whisk together almond flour, erythritol, baking powder, xanthan gum, and salt.
  • In a medium bowl, lightly beat the room temperature eggs. Whisk in the melted coconut oil, almond milk, vanilla, and liquid stevia. Pour mixture into the bowl with dry ingredients and stir to combine.
  • Preheat air fryer at 330˚F for 3 minutes. Spray donut pans or molds with avocado oil.
  • Pipe batter into six 3-inch donut cavities, filling about 3/4 full. Tap pan on counter to settle batter and reduce air bubbles.
  • Bake donuts in air fryer at 330˚F for 8 minutes. Check with toothpick for doneness. (With many air fryers, you may need to bake a set of 4 donuts first, then the remaining 2.)
  • Remove donuts from air fryer and let cool in pan for 5 minutes. Meanwhile, mix together the erythritol and cinnamon in a bowl (and bake the remaining donuts, if needed).
  • After cooling time, carefully remove donuts from pan and coat both sides of each donut with cinnamon sugar mix.
  • Place coated donuts in air fryer with the flatter side down. Bake at 350˚F for 2 minutes, immediately coat with cinnamon sugar for a final time. Enjoy!

Recipe Notes

Use a donut pan or mold for 3-inch donuts that will fit in the air fryer. Silicone molds can be cut to fit.

  • Can these be done in a regular oven?

    • Hi Nicole, I would say 350 in a preheated oven… check it at 8 to 10 mins, it may need a bit longer, depending on oven. You can use an instant read thermometer to check that they are about 180-190 degrees internal temp. 🙂

  • Do they taste more like a donut or cake? Is there a difference between these in the fryer over the oven?

    • Hi Sarah, good questions. These are more like cake donuts. The only real difference in oven to air fryer is temp and time. not the taste.

  • I haven’t tried yet, oven down. I saw a recipe (I think Ina Garten) making something no leavening ingredients except eggs. Used room room temp etc. and beat in a stand mixer for like 20 minutes. And gently folded the rest of the ingredient in.

    I wonder if beating the two eggs for at least 2-3 or even 5 minutes would help the donuts be a little lighter and not as dense.
