Fluffy Scrambled Eggs with Asparagus
Scrambled eggs are one of my go-to easy meals. They’re healthy and versatile! I’m not sure if scrambled eggs with asparagus is a common combination, but trust me, it’s really easy and yummy.
I was actually walking around Albertsons picking up the things on my list when a nice display of fresh asparagus caught my eye. I decided to pick some up and figure out how to use it when I got home – and that’s how this recipe came to be!
How to Make Fluffy Scrambled Eggs with Asparagus!
Honestly, this recipe is so easy you could probably figure it out for yourself. Once you read the instructions, you’ll be able to whip this dish up pretty effortlessly, whenever you want!
Ingredients
You only need 5 ingredients for this recipe: asparagus, swiss cheese, green onion, butter, and of course, eggs. Super simple!
The Swiss cheese, green onion, and asparagus are delicious mix-ins for these fluffy scrambled eggs. I love the fresh veggies in there!
Preparing the Eggs
Before you get to the asparagus, you need to get the eggs all ready to go. In a medium bowl, whisk together the eggs and butter for about two minutes. You will still be able to see little bits of the butter and that’s okay. Then add the Swiss cheese and green onion.
Cooking the Asparagus and Eggs
To make sure the asparagus is tender-crisp for the eggs, I cook it with one tablespoon of butter for a few minutes in a skillet first. It works – the asparagus is just right!
Then it is time to add the egg mixture and finish cooking it all together. Easy peasy.
Final Thoughts
This is the perfect recipe for a quick lunch or a healthy summer breakfast! Much better than just plain scrambled eggs!

Fluffy Scrambled Eggs with Asparagus
Equipment
- Skillet
- Medium bowl
Ingredients
- 1 ½ tablespoons butter divided
- 2 large eggs
- 1 tablespoon sliced green onion
- ¼ cup shredded Swiss cheese
- 4 stalks asparagus about 1 inch of bottom stem removed, cut into 1- to 2-inch pieces
Instructions
- In a medium bowl, whisk together 1/2 tablespoon of butter and the eggs for about 2 minutes. Then stir in the Swiss cheese and green onion.
- In a 10-inch nonstick skillet, add 1 tablespoon of butter and the asparagus. Cook on medium high heat for 2 or 3 minutes, stirring frequently, until crisp-tender.
- Add the egg mixture to the skillet, reduce heat to low and cook, stirring frequently, until eggs are thoroughly cooked, about 2 minutes. Season with salt and pepper.
