The Absolute Best Sweet Potato Casserole Ever

Our family loves sweet potatoes… well most of us. But this sweet potato casserole recipe in the air fryer is hit for everyone! All my kids know that this recipe is a tradition in our house on Thanksgiving. We eat it as a side, but we all know it is so tasty that it could be a dessert.

Normally, I have always made this recipe in the oven. However, last Thanksgiving I tried it in the air fryer and it was amazing! It is perfect if you want to whip a quick side to add into your Thanksgiving meal. Hey, I wouldn’t even judge if you made this one any time of the year as a treat for yourself!

What You Need to Make a Sweet Potato Casserole

This recipe’s ingredients are simple and tasty! You will need:

  • 2 pounds sweet potato, cubed
  • ½ cup white sugar
  • 2 eggs beaten
  • ½ teaspoon salt
  • 4 tablespoons butter softened
  • ½ cup milk
  • ½ teaspoon vanilla extract

For the toppings, you need:

  • 2 cups mini marshmallows
  • 1/3 cup packed brown sugar
  • 1/4 cup all-purpose flour
  • 3 tablespoons butter softened
  • ½ cup chopped pecans (optional)

How Do I Cook Sweet Potatoes in the Instant Pot?

I love this recipe because you can quickly prepare the sweet potato base of the casserole in the Instant Pot in just about 10 minutes.

First, add cubed sweet potatoes and one cup water into the Instant Pot. Then, make sure that the release valve is in the “sealing” position. Place the lid on, turn and lock. Next, press the “Manual” button on the Instant Pot on high pressure, and then set the timer to 10 minutes. When the potatoes finish, quickly release the pressure and drain the water.

How Do I Make Sweet Potato Casserole in the Air Fryer?

Once your potatoes are mashed and you have combined it with the sugar, eggs, salt, butter, milk and vanilla. Transfer the contents to an 8×8 baking dish or a 7-inch cake pan that came in an air fryer accessory kit. You can also prepare this recipe in five 8oz ramekins. This is perfect because then everyone gets their own personal servings straight from the air fryer!

After your first layer is in its preferred dish, pour on top of the sweet potatoes in an even layer made from the brown sugar, flour, and softened butter. Then, lightly press down.

How to Cook Air Fryer Sweet Potato Casserole

Place the dish in the air fryer basket, and cook for 6 minutes at 320°F/160°C or until mixture is cooked through. Add the marshmallows and chopped pecans to the top, press down lightly, and cook for an additional 3-4 minutes.

  • Place in the air fryer and cook for 6 minutes at 320°F/160°C or until mixture is cooked through. add the marshmallows and chopped pecans to the top, press down lightly, and cook for an additional 3-4 minutes.
