  • 1-2 yellow squash (or however much you’d like)
  • 1/2 tablespoon olive oil or avocado oil
  • salt, to taste

Instructions

  1. Preheat the air fryer to 400°F/200°C for 5 minutes.
  2. Trim the ends of the yellow squash. Then, dice it into bite sized pieces.
  3. Toss the yellow squash with oil. Season with salt and pepper.
  4. Place in a single layer in the air fryer basket.
  5. Cook for 6-8 minutes or until vegetables are tender to your liking. Sprinkle parmesan cheese on top and cook for an additional 1-2 minutes or just sprinkle on and enjoy as is.

    Plus I grew up on the recipe but it was steamed. But with summer on our heals It’s great to do it quick in the air fryer! Thank you so much!

    • Great question, Sheri. It depends on how big your serving sizes are. I’d say anywhere from 2-4 people for this recipe. If the two of you aren’t wanting a lot, you can cut this recipe in half.
