Pesto Chicken in the Air Fryer
I feel like sometimes it is easy to get bored with the normal chicken dinner recipe –enter this Pesto Chicken in the Air Fryer,
Especially if you love basil, you are going to love this easy dinner recipe. Even your pickiest eater will enjoy the flavor of this entree.
You can even switch up the veggies if you prefer other ones, but this recipe is nice because it has everything all in one dish!
Ingredients and Supplies You’ll Need to Make Pesto Chicken in the Air Fryer:
Ingredients:
- Chicken breast, boneless and skinless chopped into bite-size pieces
- Red onion, chopped into bit size pieces
- Bell pepper, chopped into bit size pieces
- Zucchini, chopped into bit size pieces
- Basil pesto
Optional:
- Mozzarella cheese, or to taste
- Cheese tortellini or pasta of choice
Supplies
- Knife
- Cutting board
- Air fryer (Cosori Pro II)
Do I need to use all the vegetables?
You definitely don’t have to if you don’t want it. However, the veggies of course add flavor and nutrients to this meal which is great. Plus they taste amazing covered in pesto.
What to serve with this chicken dinner recipe?
This sheet pan chicken dinner can stand alone on its own with just the chicken and vegetables. But, if you want, you can always make some rice, pasta, or my favorite cheese tortellini to serve with it. Yummy!
How to make Pesto Chicken in the Air Fryer:
Step 1: Prepare chicken and vegetables
Start by washing and drying all the produce. Then using a sharp knife cut the chicken and vegetables into bite-sized pieces.
Step 2: Add seasoning
Once you have everything chopped up, place it in a medium-sized bowl and add in the pesto. Stir everything together until it is coated in the pesto sauce.
Step 3: Add to the air fryer
Place everything in the air fryer basket in a single layer so everything cooks evenly.
Note: You may need to cook in batches depending on the size of your air fryer.
Step 4: Cook the pesto chicken
Now, air fry at the dinner at 380 degrees F or 193 degrees C for 12 minutes, stirring at the halfway point, or until the internal temperature chicken comes to 165 degrees F or 74 degrees C.
Step 5: Finishing touches
After the chicken is done cooking, sprinkle on mozzarella cheese.
Either close the air fryer basket and let the cheese melt or bake for an additional 2-3 minutes depending on if you want melted or charred cheese.
Then simply serve over pasta of choice or rice.

Pesto Chicken in the Air Fryer
Equipment

Ingredients
- 1 Chicken breast Chopped into bite-sized pieces
- ½ Red onion Chopped into bite-sized pieces

Instructions
- Prepare vegetables and chicken.
- Combine together in a bowl with 1/4 cup of pesto.
- Place in air fryer basket in a single layer. You may need to cook in batches depending on the size of your air fryer.
- Air fry at 380 °F for 12 minutes, stirring at the halfway point, or until chicken comes to temp (165 °F).
- Sprinkle on mozzarella cheese. Either close the air fryer basket and let the cheese melt or bake for an additional 2-3 minutes depending on if you want melted or charred cheese.
- Serve over pasta of choice or rice.
