Ingredients
As you can expect from a lemon rice recipe, there aren’t too many ingredients involved here. This is, as I said, a super simple side dish! All you’ll need is some long-grain white rice, butter, chicken broth, water, lemon juice, salt, pepper, and some fresh parsley.
For the chicken broth, if you want to go a bit healthier (or if you just don’t have any on hand), try this homemade fat-free chicken broth recipe!
Liquid to Rice Ratio
Instant Pot recommends a 1:1 ratio when cooking rice. For this recipe, I consider the 2 cups rice = chicken broth/water combination. The lemon juice is extra and does not interfere with that ratio.
That being said, the juice should not exceed ¼ cup so that it doesn’t throw that 1:1 ratio off.
Serving Tips
If you’d like, you can add some additional parsley and even some fresh lemon slices to the lemon rice upon serving. This adds some additional freshness and flavor.

Instant Pot Lemon Parsley Rice Recipe
Equipment
- Pressure Cooker
Ingredients
- 1 Tablespoon Butter
- 2 cups long grain white rice
- 1 cup Chicken Broth
- 1 cup Water
- ½ lemon juiced (less than ¼ cup)
- ½ teaspoon salt
- ¼ teaspoon pepper
- ¼ cup chopped fresh parsley
- Optional Garnishes: Additional lemon slices and chopped parsley
Instructions
- Melt the butter in the Instant Pot using the Saute setting.
- When the butter is melted, add the rice and cook for two minutes, stirring constantly.
- Add chicken broth, water, lemon juice, salt and pepper.
- Cover and lock lid, being sure the lid valve is set to seal.
- Cook the rice manually, on high pressure for 4 minutes.
- Use the quick pressure release and remove the lid when steam stops.
- Add the ¼ fresh parsley and use a fork to fluff the rice.
- Serve immediately, topping with additional lemon slices and parsley if desired.
