Quick Chicken Parmesan and Penne Pasta Recipe
There are a lot of things to love about this quick chicken parmesan penne pasta recipe. It’s delicious, it’s easy to make, it doesn’t take a lot of time out of your schedule, and it’s delicious (I know, I said delicious twice – that’s how good it is).
However, my favorite thing about this recipe has to be just how convenient it is. It’s almost all cooked in one skillet! Makes the clean up easy, and still gives you a delicious and healthy meal.
Chicken Parmesan Penne Pasta Ingredients
The sauce is basically homemade but still really simple. The chicken is just frozen breaded chicken from the store. I used a panko breaded chicken that I bought at Costco; very yummy, light, and crispy.

Cooking the Sauce & Penne
You can just cook the sauce and the pasta together in the skillet! Genius and convenient. It is just the right amount of pasta for the liquid. If you’re wondering what skillet I’m using, it’s this T-fal non-stick 12.5 inch one. I love it!
Finishing & Serving Your Chicken Parmesan Penne Pasta
Throw on the cooked chicken and cheese, then stick the whole skillet in the oven for a bit. Most stores sell an Italian blend of shredded cheese, which is perfect for this dish. Once your cheese has melted and the chicken is nice and crispy, it’s ready to serve!

Quick Chicken Parmesan Penne Pasta Recipe
Ingredients
- 1 pound frozen breaded boneless skinless chicken breast
- 2 cans diced fire-roasted tomatoes
- 1 tablespoon olive oil
- 6 garlic cloves minced
- 1 teaspoon minced fresh oregano or 1/4 teaspoon dried
- 1/8-1/4 teaspoon red pepper flakes
- salt and pepper
- 2 cups water
- 1 ½ cups low-sodium chicken broth
- 12 ounces penne
- 4 ounces shredded Italian cheese blend 1 cup
- ¼ cup chopped fresh basil
Instructions
- Bake the chicken according to package instructions. Let cool slightly and slice crosswise into 1/2-inch-wide strips. Adjust oven rack to middle position and heat oven to 375/190°C.
- Meanwhile, pulse the tomatoes in a food processor until coarsely ground and no large pieces remain, about 12 pulses. Cook oil, garlic, oregano, pepper flakes, and 1/4 teaspoon salt in 12-inch ovensafe skillet over medium-high heat until fragrant, about 1 minute. Stir in processed tomatoes, water, 1 cup broth, and pasta. Cover and cook at vigorous simmer, stirring often, until pasta is tender, about 15 minutes.
- Stir in remaining 1/2 cup broth. Season with salt and pepper to taste. Scatter sliced chicken evenly over top and sprinkle with cheese. Transfer skillet to oven and bake until cheese has melted and chicken is crisp, 5-10 minutes. Sprinkle with basil and serve.
