how to cook asparagus

The easiest and best roasted asparagus recipe!

Especially with asparagus being on sale lately, I want a go-to favorite roasted asparagus recipe. (Seems like it often goes on sale during Spring and early Summer months.) But most of the recipes I try are a bit of a let down. Until recently. A friend invited us to dinner and served roasted asparagus as a side dish. It was excellent! A few of us even commented that it was the best asparagus we’ve ever had!

Of course, I asked her for the recipe and tried it out myself too. The funny thing is that it is one of the most simple and easy asparagus recipes out there! Sometimes simple really is better!

For roasting asparagus, look for thicker asparagus spears. The thicker, the better! And like usual, break off and discard the tough, lower ends of the spears. Then just roll the asparagus around in olive oil, coarse or kosher salt, and black pepper.

Stick the asparagus in the oven for 10-12 minutes, until they are tender when pierced with a fork. You can sometimes start to smell that the asparagus is close to being done too. That’s it for the recipe though! Somehow the oven temperature, simple seasoning, and cooking time all work together to create the best roasted asparagus ever. It doesn’t seem like anything special, but it sure tastes great! And it turns out perfectly every time.

Now if you really love a hint of lemon or sprinkle of Parmesan cheese, go ahead and add some before serving or serve it along side the asparagus. But I strongly recommend giving this asparagus recipe a try as it is written. You might be pleasantly surprised and pleased with the results.

Yield: 1 pound | Serves: 4

  • 1 pound fresh asparagus (thicker is better for roasting)

  2. Break off and discard the tough lower ends of the asparagus spears - they usually break naturally at about 2 inches from the bottom of spear.
  3. Place asparagus in a single layer on the baking sheet. Drizzle olive oil over all and roll the asparagus to coat. Season with salt and pepper, then roll the asparagus again to coat evenly.
