Easy and delicious grilled corn on the cob recipe!

Have you tried grilled corn on the cob yet? It is so good and so easy! You will not need to wait for a big pot of water to boil. With this delicious ginger-lime glaze, you won’t need to roll your corn around in any extra butter, salt, and pepper either.

Ginger-lime grilled corn is a big hit with the whole fam! I usually don’t even eat a whole ear of corn on the cob, but I quickly finished off two ears of this grilled corn before I even knew it. The glaze isn’t too strong, but it adds a really nice flavor.

The ginger-lime glaze is a mixture of low-sodium chicken broth, unsalted butter, sugar, lime zest, kosher salt, and fresh ginger or ginger paste. I personally use ginger paste in almost every recipe that calls for fresh, grated ginger. It is just easier for me and it tastes great too!

The only prep you need to do for the corn is peel back the husks and remove the corn silk. Use strips of the husk to tie back each of the husks and you’ve got yourself some handy little handles. When you’re grilling the corn, try to keep the husk handles from being over hot burners or they will burn!

Unfortunately, I don’t really have room on my grill to keep the husks from burning. The corn still turns out great, you will just get some smoke and burning husk smell going on. We had the back door open one time and it didn’t take long for our smoke detector to start going off!

Ginger-Lime Grilled Corn Recipe

Yield: 6 ears of corn | Serves: 6

Ingredients

  • 1/3 cup low-sodium chicken broth
  • 4 tablespoons unsalted butter
  • 1 tablespoon granulated sugar
  • 1 teaspoon finely grated lime zest
  • 1 teaspoon kosher salt
  • 1 teaspoon grated fresh ginger or ginger paste
  • 6 ears fresh sweet corn, in husks

Instructions

  1. Prepare the grill for direct cooking over medium heat.
  2. In a medium saucepan over medium-high heat, stir together the glaze ingredients and bring to a boil. Continue to boil until the glaze slightly thickens, 5-7 minutes. Keep the glaze warm.
  3. Pull the corn husks back from the ears, but do not break them off. Remove and discard the corn silk. Peel off 6 long strips of corn husk, about 1/2-inch wide. On each ear, gather the husks together and use the strips to tie the husks back for a handle.
  4. Brush the glaze all over the exposed corn. Grill over direct medium heat, with the lid closed as much as possible, letting the husk handles extend over indirect heat so they don't burn. Cook the corn until it is browned in spots and tender, 10-15 minutes, turning several times. Transfer to a platter and baste with remaining glaze.
