I know it can be hard to find a tried and true meatloaf recipe, but this meatloaf dinner for 1 has been tried and tested and it is AMAZING! You cannot go wrong with this recipe. 

Not only does it taste fantastic because of the perfect pairing of spices in this easy meatloaf dinner recipe, but you can also have it ready with a side of baked cheesy potatoes in less than 30 minutes! Talk about amazing right?!

Ingredients and Supplies Needed for Meatloaf Dinner for 1:

Ingredients:

  • Crushed saltines
  • Milk
  • Fresh parsley, minced
  • Beaten egg
  • Onion powder
  • Minced garlic or garlic powder
  • Dijon mustard
  • Worcestershire sauce
  • Coarse Kosher salt
  • Coarse Black pepper
  • Ground meat ( I used beef)
  • Potatoes
  • Vegetable of choice

Supplies:

  • Air fryer 
  • Medium mixing bowl
  • Wooden spoon

 

Which Type of Meat to Use

For this meatloaf recipe, you can use any ground meat that you like. I have tried it with beef because that is what my family likes best but there are other options! 

Give these a try:

  1. Ground pork
  2. Ground turkey
  3. Ground chicken

Saltine Cracker Substitutes

To make up this recipe you will need to have some sort of thickening base that will absorb the moister and hold the flavor when you are cooking in your air fryer like the Cosori 5.8QT air fryer. When making this recipe we used crushed up saltine crackers but you don’t need to just stick with those. 

Saltine Cracker Substitutions to Try:

  • Crushed Ritz crackers
  • Crushed Club crackers
  • Bread crumbs
  • Oats

 

How to Make Meatloaf Dinner for 1:

Step 1: Make Up the Meatloaf Mixture

First, you need to make up the meatloaf mixture. Combine the ground beef, crushed saltines, milk, parsley minced, lightly beaten egg, onion powder, minced garlic (or garlic powder), Dijon mustard, Worcestershire sauce, coarse kosher salt, and coarse black pepper all in a medium mixing bowl. 

Mix it all together until the milk is absorbed and the ingredients are well combined. 

 

Step 2: Begin Cooking the Meatloaf

Once the mixture is all made, form the meat into 2 logs like patties and then place them into the bottom of the air fryer basket.

Return the basket to the air fryer and cook the meatloaf for 5 minutes at 380F or 193C. 

 

Step 3: Prepare the Potatoes

Now you will need to wash and dry your potato while the meatloaf is cooking. 

Then place the potatoes in the microwave for 4-5 minutes and let them cook a bit in there. 

While that is cooking prepare the desired vegetable you’d like to add to the air fryer. Broccoli, peppers, and onions are all great options to go with this meatloaf dinner. 

 

Step 4: Finish Cooking the Meatloaf and Vegetables

After the 5 minutes is up, remove the basket from the air fryer and add in the potatoes and the vegetable that you choose. You can also cut the potato in half and top it with a little cheese! 

Cook everything at 380F or 193 C for about 12-15 minutes at 380F or 193 C or until they are tender and the meatloaf is cooked through.

Meatloaf is always a great hearty home-cooked meal that my family will devour, but now with this recipe, you can make it suit one or two people, or more if you’d like! It is so good and such a simple recipe to make up when you don’t know what to have. 

I love that you don’t have to do much planning for this recipe and you can make it when you are short on time but want a good tasty meal.

  • ¼ cup Crushed Saltines
  • ¼ cup Milk
  • 1 tbsp Fresh parsley
  • ½ Egg lightly beaten
  • ½ tsp Onion powder
  • 3-4 cloves Garlic finely minced or 1 tsp garlic powder
  • ¼ tbsp Dijon mustard
  • ¾ tbsp Worcestershire sauce
  • tsp Coarse Kosher salt
  • tsp Coarse black pepper
  • ½ lbs Ground meat I used ground beef
  • 1-2 Potatoes
  • Vegetable of choice Frozen broccoli, peppers, or onion work great!

Instructions

  • Make the meatloaf mixture. You can adjust the amounts depending on how many people you are cooking for. Form meatloaf into small patties.
  • Cook meatloaf for 5min at 380 °F.
  • Wash a potato and cook it in the microwave for 4-5 minutes.
  • Prepare vegetable of choice.
  • Add cooked potato and vegetables to air fryer. Cook at 380 °F for additional 12-15 minutes, or until meatloaf reaches internal temperature, potato and veggies are roasted to your liking.
