Air Fryer Blueberry Muffins

They have the perfect combination of a moist muffin and a sweet crunchy topping that is super tasty!

Ingredients and Supplies You’ll Need to Make Air Fryer Blueberry Muffins:
Ingredients:
- Egg
- Oil
- Water
- Vanilla extract
- Lemon zest
- Sugar
- Flour
- Baking powder
- Salt
- Blueberries
Crumble
- All-purpose flour
- Brown sugar
- Butter, slightly melted
- Ground cinnamon, optional
Supplies
- Mixing bowls
- Whisk
- Small mixing bowl
- Silicone muffin liners
- Air fryer (Cosori Pro II)
What kind of blueberries to use
For this recipe you can use either fresh or frozen blueberries. Generally frozen blueberries will actually end up turning your batter more blue from the residual water or ice that builds up. But, they will still work.
However, I tend to like to work with fresh blueberries for making muffins.
Can I use other mix-ins?
If you want to take the blueberries out of this recipe and change it up with something else, that will still work too!
The muffin base is super delicious and would work great if you wanted to throw a few other things in too!

- Chopped strawberries
- Nuts
- Lemon and poppy seeds
- Chopped apples
- Chococlate chips
How to make Air Fryer Blueberry Muffins:
Step 1: Mix wet ingredients
To start making the muffins begin by whisking together the egg, oil water, vanilla extract and lemon zest together in a mixing bowl.
Step 2: Mix dry ingredients
Then, whisk together the sugar, flour, baking powder and salt in a separate mixing bowl.
Step 3: Combine everything
Now, combine the dry ingredients with the wet ingredients. Add in the blueberries.
Step 4: Make the topping
Now that the muffin batter is made, make the crumble, combine the flour and sugar in a small bowl. Add in 2 tbsp of melted butter, add more as needed until the crumbs form.
Do not over-mix because you do not want it to become like a dough.
Step 5: Prepare the muffins
Once you have the muffin batter and topping made, fill the silicone muffin liners about halfway full with the muffin mix.
Place a couple of blueberries on top of the muffins (for exploding blueberry effect), then add the crumble mixture on top.
After the liners are filled, place in the air fryer basket.
Step 6: Bake the muffins
Now, air fry at 320 degrees F or 160 degrees C for 10-11 minutes, or until the interval temperature is around 200-205 degrees F or 93-96 degrees C.
After the muffins are cooked through, let the muffiin rest in the warm air fryer for a couple of minutes.
Then, carefully remove them from the air fryer basket and silicone liners. Enjoy!

- Silicone muffin liners
Ingredients
- 1 egg
- ⅓ cup oil
- 2 tablespoon water
- ¼ teaspoon vanilla extract
- 1 teaspoon lemon zest
- ⅓ cup sugar
- ⅔ cup flour
- ½ teaspoon baking powder
- Pinch Salt
- ½ cup Blueberries
Crumble
- ¼ cup all-purpose flour
- ¼ cup brown sugar
- 2-3 Tablespoons butter slightly melted
- dash ground cinnamon optional
Instructions
- Whisk together the egg, oil water, vanilla extract and lemon zest together in a bowl.
- Whisk together the sugar, flour, baking powder and salt in a separate bowl.
- Combine the dry ingredients with the wet ingredients. Add in the blueberries.
- Make the crumble, combine the flour and sugar in a small bowl. Add in 2 tbsp of melted butter, add more as needed until the crumbs form. Do not over-mix because you do not want it to become like a dough.
- Fill silicone muffin liners about halfway full with the muffin mix. Place a couple of blueberries on top of the muffins (for exploding blueberry effect), then add the crumble mixture on top.
- Place in the air fryer basket.
- Air fry at 320 °F for 10-11 minutes, or until the interval temperature is around 200-205F or 93-96C. Let the muffins rest in the warm air fryer for a couple of minutes.
- Remove from the air fryer basket and silicone liners. Enjoy!

I’ve baked: 160ºC for 11min + 185ºC for 7min.

I really liked the results of my recipe. I used frozen blueberries and I baked at 320 deg for 14 minutes to get it to 200 deg internal. I messed up the crumble a little, but it still tasted great!
