It uses the viral tortilla fold method that became popular on TikTok, but the recipe itself is totally practical and worth keeping around for busy mornings, weekend brunch, or a quick breakfast-for-dinner idea.

Instead of rolling everything into a traditional wrap, you cut one slit in the tortilla, add a different filling to each quarter, fold it into a neat triangle, and crisp it in the air fryer. The result is a crunchy breakfast wrap with eggs, bacon, salsa, and melty cheese in every bite.

Lay the tortilla flat on a cutting board. Make one slit from the center of the tortilla straight down to the edge. Think of it like cutting one radius of the tortilla, not cutting it in half.

Step #2: Add the Fillings to Each Quarter

Place one filling in each quarter of the tortilla. I like to add scrambled eggs to the first quarter closest to the cut, bacon to the next quarter, pico de gallo or salsa to the third quarter, and cheese to the final quarter.

The order is flexible, but placing cheese on an outside section can help it melt and act like a little glue when the wrap cooks.

Step #3: Fold the Tortilla

Start with the section closest to the slit and fold it up over the next quarter. Then fold that section over the third quarter. Finally, fold it over the last quarter to create a triangle-shaped breakfast wrap.

  • 4 soft flour tortillas taco sized
  • 6 eggs
  • 1/4-1/2 cup milk
  • 8-12 slices bacon
  • pico or salsa to taste

Instructions

  • Whisk together the eggs with the milk. Cook the eggs on the stovetop. You basically want 4 big chunks of scrambled eggs, about a quarter size of the tortilla you are using.
  • Cook the bacon. Place the bacon strips in the air fryer basket and air fry at 400 °F for 5-7 minutes. Cut into bite sized pieces.
  • Prepare the tortilla. Cut the radius of the tortilla, from the middle to one of the edges.
  • Assemble the wrap. Place the egg on a quarter of the tortilla next to the cut you just made. In the next quarter, place the bacon. In the third quarter, place the pico or salsa. In the last quarter, place the cheese.
  • Fold the tortilla. Fold the tortilla by folding each quarter over the other, starting with the egg, until you have a triangle formed.
  • Air fry. Lightly spray the air fryer basket and place the tortilla wrap inside. Lightly spray the top of the wrap and air fry at 370 °F for 5 minutes, or until the tortilla is golden brown, the cheese is melted, and desired crunchiness is reached!
