Guys, this Mexican skillet dinner recipe from Easy Keto Dinners is so easy and tasty! My whole family loves it! That is a big deal to me because I have some picky ones.

The ingredients are simple, the results are delicious and healthy, and it only takes 30 minutes to make! Win, win, win.

I use this homemade taco seasoning recipe in this Mexican skillet dinner and various other recipes (like these oven-baked tacos). Tastes great, really easy to mix together, and no added sugar or any other unnecessary ingredients.

I’ve used diced fresh tomatoes and canned diced tomatoes in this recipe. Both work well! If you’ve got extra fresh tomatoes from the garden, use them! Have a can of diced tomatoes on hand? Use it.

You just don’t want a lot of extra liquid in there, so keep an eye on that when adding canned tomatoes. You can even use the canned tomatoes with the green chilies if you want some extra spice!

Speaking of spice, we like to keep it more on the mild side for my kiddos, so 2 1/2 to 3 tablespoons of taco seasoning and no green chilies works well for us.

If you want more spice, go with 3 tablespoons seasoning, add some green chilies or jalapenos, and use Mexican blend cheese or pepper jack. Adapt it to suit your taste! Easy peasy.

Adding Riced Cauliflower

I usually just use a bag of frozen riced cauliflower, but you can also use fresh riced cauliflower. Most grocery stores carry it already-riced now, in the frozen veggie section or in the fresh produce area.

Just dump the riced cauliflower into the skillet, straight from the freezer or fresh. Once it starts to soften, add cheese over top and cover for a few minutes to let it melt, and you’re done!

Everything about this skillet dinner recipe is easy! After the cheese melts over top, you can remove it from heat and top with your favorite taco toppings. Try sour cream, avocado, more cheese, lettuce, lime wedges, more diced tomatoes, or whatever you like!

  • In a large skillet over medium heat, cook the ground beef, breaking it apart, until almost cooked through but still a little pink. Add the onion and pepper, then continue cooking until ground beef is no longer pink. Stir in the taco seasoning.
  • Add the tomatoes and cauliflower, stir to combine. Stir in chicken broth. Bring to a simmer, then reduce heat to medium low and cook until cauliflower rice begins to soften (8-10 minutes for frozen).
  • Sprinkle the shredded cheese over top and cover for a few minutes, until cheese is melted. Remove from heat and top with your favorite taco toppings, like sour cream, olives, avocado, cilantro, more cheese, more diced tomatoes, fresh lime wedges, etc.
