How to Make Air Fryer Chicken Sweet Potato Fajitas

Step 1: Cook the Sweet Potatoes

Sweet potato forked and ready to go into the air fryer basket

Wash and dry your sweet potatoes, then poke each one several times with a fork. Air fry at 380°F (193°C) for 20 minutes. This gives them a head start since sweet potatoes take longer to cook than the chicken.

Step 2: Prep the Chicken, Peppers & Seasoning

Sliced bell peppers and onions being prepared alongside cubed chicken breast for fajita filling

While the sweet potato cooks, slice the onion and bell pepper into ½ to 1-inch thick strips. Cut the chicken into bite-size cubes or strips. Mix together all of the seasonings in a small bowl.

In a large bowl, combine the chicken, bell peppers, onions, and seasoning mixture. Toss everything together until evenly coated.

Step 3: Add the Fajita Filling to the Air Fryer

Once the sweet potato has had its initial 20 minutes, add the fajita mixture to the other side of the air fryer basket. Air fry for an additional 10 minutes at 380°F (193°C).

Step 4: Check for Doneness

Testing sweet potato with a fork and checking chicken internal temperature with a meat thermometer

Fork-test the sweet potato — if it glides in easily, it’s done. Use an instant read thermometer to check the chicken: it’s safe to eat once it reaches an internal temperature of 165°F (74°C), per USDA food safety guidelines.

If either the potato or the chicken needs more time, continue in 3 to 5 minute increments. You can always pull whichever item is done first and let the other finish up.

Step 5: Build Your Stuffed Sweet Potato Fajita

Once everything is done, slice the sweet potato in half lengthwise and use a fork to lightly mash the insides. Pile on the fajita mixture, add your cheese and any other toppings, and dig in!

Tips for the Best Air Fryer Sweet Potato Fajitas

  • Don’t skip the fork poke. Poking the sweet potato before cooking lets steam escape and keeps it from bursting. Just a few good pokes all over is plenty.
  • Cut chicken into even pieces. Uniform-sized chunks cook more evenly, so you won’t end up with some pieces overdone and others still pink.
  • Don’t crowd the basket. The fajita filling needs space to get a little crispy on the edges — if you’re doubling the recipe, cook the filling in batches.
  • Use smoked paprika if you have it. It adds a nice depth of flavor that regular paprika can’t quite match, though either works just fine.
  • Always check the chicken temp. An instant read thermometer is your best friend here. Pull it at exactly 165°F for juicy, safe chicken every time.
  • Add toppings right before serving. Cheese, avocado, and sour cream are all best added fresh — not while the filling is still piping hot in the air fryer.

Variations & Substitutions

Can You Use Something Other Than Chicken Breast?

Absolutely. Chicken thighs work beautifully here and are actually more forgiving if the filling stays in the air fryer a minute or two longer. You can also use chopped steak or even shrimp — just adjust cook time accordingly since shrimp cooks much faster than chicken.

Does Regular Paprika Work?

Yes! If you only have regular paprika at home, go ahead and use it. Smoked paprika just adds an extra layer of flavor, but it’s not worth a special trip to the store. The cumin and chili powder carry most of the seasoning weight anyway.

What If I Want to Use Tortillas Instead?

No problem — just cook the seasoned chicken and pepper filling at 380°F for about 10 to 12 minutes (no sweet potato needed), and serve it in warm flour or corn tortillas with your favorite toppings. The same fajita seasoning works perfectly either way.

Can I Make This Vegetarian?

Yes! Skip the chicken and use black beans, chickpeas, or a combination of both. Toss them in the same seasoning mixture and air fry for about 8 to 10 minutes. The sweet potato base and fajita veggies are so satisfying that you really won’t miss the meat.

Storage & Reheating

Store leftover fajita filling and sweet potatoes separately in airtight containers in the refrigerator for up to 3 days. Reheat the filling in the air fryer at 350°F for 3 to 4 minutes to bring back some of the texture. The sweet potatoes reheat well in the microwave in about 2 minutes.

The assembled fajitas don’t freeze well — sweet potatoes get watery after freezing and thawing. But you can freeze the seasoned, uncooked chicken and peppers together and thaw in the fridge overnight before cooking.

Frequently Asked Questions About Air Fryer Chicken Sweet Potato Fajitas

How long does it take to make chicken sweet potato fajitas in the air fryer?

From start to finish, plan on about 30 minutes. The sweet potato goes in first for 20 minutes, then the fajita filling is added and everything cooks together for another 10 minutes.

Can you do sweet potatoes in the air fryer?

Yes! Air frying is one of the easiest ways to cook sweet potatoes. At 380°F, a medium sweet potato is fork-tender in about 30 minutes — and you don’t need to preheat the oven or wrap anything in foil.

What temperature should chicken reach in the air fryer?

Chicken must reach an internal temperature of 165°F (74°C) to be safe to eat. Always use an instant read thermometer to check — don’t rely on the color of the meat alone.

Can I use frozen chicken in this recipe?

It’s best to use thawed chicken here so the cubes cook evenly alongside the vegetables. If you start from frozen, the chicken will release a lot of liquid and steam rather than getting that slightly crispy texture from the air fryer.

Can I make these ahead of time for meal prep?

Yes! Cook the sweet potatoes and the fajita filling separately, then store them in airtight containers in the fridge for up to 3 days. Reheat the filling in the air fryer and the potato in the microwave, then assemble just before eating.

What size sweet potato works best for this recipe?

Medium sweet potatoes work best — large ones may need a few extra minutes to cook through, and very small ones don’t leave enough room for all the filling. Look for ones that are roughly similar in size so they cook in about the same amount of time.

Seasoning

  • ¼ tsp Garlic powder
  • 1 tbsp Lime juice

Toppings:

  • Mexican blend cheese Monterrey jack cheese, or cheese of your choice
  • Other desired toppings such as cilantro, sour cream, avocado, tomato, etc.

Instructions

  • Wash and dry the sweet potato. Fork it, then air fry for 20 minutes at 380 °F.
  • While the potato cooks slice the onion and bell peppers into 1/2-1 inch thick slices. Then cube or slice the chicken into bite slice pieces.
    Mix together the seasonings.

  • Fork test the sweet potato, if it is done, remove from the air fryer basket. Take the internal temperature of the chicken, once it reaches an internal temperature of 165 °F then it is safe to remove. Continue cooking as needed. I recommend starting with additional 3-5 minutes, if needed.
  • Repeat until potato and chicken are done to your liking. Remove either item as needed to avoid overcooking it while the other finishes up.
  • Once everything is done, slice the sweet potato in half, mash the insides with a fork and top with the fajita mixture, cheese, and other toppings of your choice.

Recipe Notes

Depending on if you are feeding 1 or 2 people. The fajita mixture makes enough for 2 servings, so you can serve for two or enjoy leftovers.
