Avocado Deviled Eggs

With Easter coming up the Fab Frugal team realized there would be no putting mayo in deviled eggs for Easter dinner. So we wanted to find some friendly recipes. Last week Amber shared this great healthier deviled egg recipe using Greek yogurt. Today I am sharing an avocado version.
I love guacamole! It is so yummy. Here is my regular Guacamole recipe. You could do this recipes with just guacamole and leave out the egg yellows. We tried it with the yellows. It was good. My kids gobbled them up, but I think I prefer the recipe with out the yellows.
There are a few things that I use to make this recipe easier…
- I love my egg timer! Have you ever used one. It is easier than you might think and the eggs turn out just how you like them every time! You can learn all about my Secret to the Perfect Hard Boiled Eggs.
- I love my immersion blender! It is great for this recipe becasue it gives the egg filling a nice smooth texture. Cathy loves her’s too. It was a great tool to help her in her 50 lb weight loss. Check out her review to see all the great ways she uses her immersion blender.
- I love my essential oils! If you do not have lemon or lime on hand you can use lemon essential oil or lime essential oil. Dill essential oils might be really yummy in these eggs too. I should have tried that. If you choose to use lemon or lime essential oil in this recipe use 2-3 drops. It does not take much. You can use essential oils in cooking, but be careful about which brand you use. Not all essential oils are created equal. Avocado Deviled Eggs
Ingredients
- 6 hard boiled eggs
- 2 large avocados
- 1 lime or lemon or essential oil
- ¼ cup cilantro
- 1 clove of garlic
- 1 tsp salt
Instructions
- Hard boil your eggs. See the post for a secret for getting these perfect every time. Let eggs cool.
- Cut eggs in half length wise and remove the egg yolk and set aside.
- Mash together egg yolks only with all other ingredients. I like to use my immersion blender to get it really smooth.
- Scoop mixture into egg whites and serve.
