Air Fryer Sweet Potato Chicken Fajitas

Ingredients and Supplies You’ll Need to Make Air Fryer Chicken Sweet Potato Fajitas:
Ingredients:
- Sweet potatoes (depending on if you are feeding 1 or 2 people. The fajita mixture makes enough for 2 servings, so you can serve for two or enjoy leftovers)
- Onion
- Bell pepper
- Cubed chicken
Seasoning
- Olive oil
- Ground cumin
- Chili powder
- Smoked or regular paprika
- Garlic powder
- Lime juice
Optional Toppings:
- Mexican blend cheese, Monterrey jack cheese, or cheese of your choice
- Other desired toppings such as cilantro, sour cream, avocado, tomato, etc.
Supplies
- Cutting board
- Knife
- Fork
- Small bowl
- Large bowl
- Instant read thermometer
- Air fryer (Cosori Pro II)
Does regular paprika work?
If all you have at home is regular paprika rather than smoked paprika that is totally fine and will work. The smoked paprika just adds even more flavor to the dish.
But I wouldn’t say you need to make an extra grocery store run just to get it.
Can you use something other than chicken breast?
You definitely can! If you either aren’t a fan of chicken breasts or are looking for more ways to way this recipe there are options.
You can always use chicken thighs, chopped-up stewed beef, or even some ship if you really wanted!
How to Make Air Fryer Chicken Sweet Potato Fajitas:
Step 1: Prep the sweet potatoes
Start by washing and drying the sweet potatoes. Fork each one and then air fry them for 20 minutes at 380 degrees F or 193 degrees C.
Step 2: Prep and season the chicken and peppers
While the potato cooks slice the onion and bell peppers into 1/2-1 inch thick slices. Then cube or slice the chicken into bite-size pieces.
Mix together all the seasonings in a small bowl.
In a large bowl combine the seasonings, chicken, bell peppers, and onions. Stir everything to combine and make sure that everything is coated in the seasonings.
Step 3: Add the chicken and peppers
Once the potato finishes its first 20 minutes of cooking, add the fajita mixture to the other side of the air fryer basket.
Air fry for an additional 10 minutes at 380 degrees F or 193 degrees C.
Step 4: Test the potatoes and chicken
Fork test the sweet potato, if it is done, remove it from the air fryer basket. Take the internal temperature of the chicken, once it reaches an internal temperature of 165 degrees F or 74 degrees C then it is safe to remove.
Continue cooking as needed. I recommend starting with additional 3-5 minutes if needed.
Repeat this step until the potato and chicken are done to your liking. You can always remove either item as needed to avoid overcooking it while the other finishes up.
Step 5: Build the sweet potato fajita
Once everything is done, slice the sweet potato in half, mash the insides with a fork, and top with the fajita mixture, cheese, and other toppings of your choice.
