  • 6 medium sized potatoes (or roughly 7 cups chopped)
  • 3 cups chicken stock
  • 1 cup heavy cream
  • 3 cloves garlic
  • 1 cup chopped onion
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 cup crumbled bacon
  • cheddar cheese for garnish


  1. Peel and chop the potatoes in 1 inch chunks. Chop the onion and mince the garlic.
  2. Add all vegetables to the slow cooker, salt and pepper, cover in chicken broth and cook for 3 hours on high or 6 hours on low.
  3. Add crumbled bacon with drippings (if you have any).
  4. Remove 1/2 to 1/3 of the cooked potatoes and put in the blender with the heavy cream. Mix until smooth and return to the slow cooker. Mix all ingredients. Cook for an additional 30 minutes. Garnish with cheese and bacon. Serve!
