How to make egg wash
Egg wash is actually very simple to make and generally, you only need 1 or 2 ingredients depending on how you want to make it.
It can be made with just an egg, an egg with water, or an egg with a dairy base like milk or heavy cream.
Which kind of egg wash you decide to use depends on what you are making and your personal preferences.
Baker Bettie has a great recipe with instructions for an easy way to learn how to make egg wash.
How to make sure the honey mustard rolls are cooked all the way
Any time you are cooking with meat it is important to make sure they are getting to a safe to consume temperature for the meat you are making.
For sausage, you will want to make sure that the internal temperature is at least 160 degrees F or 71 degrees C.
To temp this recipe, turn the pastry rolls on its side and insert the thermometer through the sausage.
This will give you an accurate reading of the doneness of the sausage and not the puff pastry.
How to Make Honey Mustard Sausage Rolls:
Step 1: Create the meat mixture
Mix together the sausage, honey, dijon mustard, panko, and thyme together in a bowl.
Step 2: Prepare the puff pastry
Unroll the puff pastry sheet. Sheet sizes may vary, so the total number of rolls you can make may vary.
Once it is unrolled, cut the pastry in half lengthwise.
Step 3: Begin building the rolls
Take the sausage mixture and place it in the middle of the pastry length-wise, leaving enough room along the edges to seal it shut.
Step 4: Egg wash the sausage roll
Brush the egg wash on one length side of the pastry.
Take the other side of the pastry and roll it over the sausage to close it, meeting the egg wash side on the other side. Repeat with the other half of the pastry sheet.
Step 5: Slice the rolls
Cut the pastry in half and half again, until you end up with 8 or so sausage rolls per log. (You can make the rolls as big or as small as you want, may need to adjust cooking time accordingly).
Step 6: Cook the honey sausage rolls
Place the rolls in a preheated air fryer and cook for 350 degrees F or 176 degrees C for 10-12 minutes, or until the internal temp reaches 160 degrees F or 71 degrees C.
Just know that the time will also vary depending on the size of your rolls and how many you are cooking together in your air fryer.
After it reaches or is near internal temp, bump up the heat to 400 degrees F or 200 degrees C and cook the sausage rolls for an additional 2-3 minutes to make it extra crispy and golden (this is optional but makes them extra perfect).
