16ozBreakfast pork sausageor chicken sausage - I suggest trying to find a more neutral flavor of sausage, although you can use a flavored sausage, if desired. You can get the sausage links, sausage patties, or ground sausage. If you get sausage links, be sure to remove the casing.
Mix together the sausage, honey, dijon mustard, panko, and thyme together in a bowl.
Unroll the puff pastry sheet. Sheet sizes may vary, and so the total number of rolls you can make may vary.
Cut the pastry in half lengthwise.
Take the sausage mixture and place it in the middle of the pastry length wise, leaving enough room along the edges to seal it shut.
Brush the egg wash on one length side of the pastry. Take the other side of the pastry and roll it over the sausage to close it, meeting the egg wash side on the other side. Repeat with the other half of the pastry sheet.
Cut the pastry in half and half again, until you end up with 8 or so sausage rolls per log. (You can make the rolls as big or as small as you want, may need to adjust cooking time accordingly).
Place in a preheated air fryer and cook for 350 °F for 10-12 minutes, or until the internal temp reaches 160 °F (*see note) (time will also vary depending on the size of your rolls and how many you are cooking together in your air fryer). After it reaches or is near internal temp, bump up the heat to 400 °F and cooked for an additional 2-3 minutes to make it extra crispy and golden (Optional).
Notes
Turn the pastry rolls on its side and insert the thermometer through the sausage. This will give you an accurate reading of the doneness of the sausage and not the puff pastry.
