Quick tip: If your wrappers feel dry or crack easily, keep them covered with a lightly damp paper towel while you assemble. This helps them stay pliable and makes rolling easier.

FAQ

Does the chicken need to be cooked first?

Yes. The chicken must be fully cooked before adding it to the wraps. The air fryer doesn’t cook long enough inside the wrappers to safely cook raw chicken. You can use rotisserie chicken, leftover chicken, or cook it ahead of time on the stovetop, in the air fryer, or in the Instant Pot. (For safe chicken temps, the USDA recommends cooking poultry to a safe internal temperature.)

Do I have to use boom boom sauce?

No, but it’s highly recommended! Boom boom sauce adds a creamy, slightly sweet heat that pairs perfectly with the Santa Fe filling. If you prefer something different, these wraps are also delicious with sour cream, guacamole, salsa, queso, BBQ sauce, or ranch.

Can Egg Roll Santa Fe Wraps be frozen?

Yes. Let the wraps cool completely, then freeze them in a freezer-safe bag for up to 3 months. Reheat straight from frozen in the air fryer at 380°F for 6–8 minutes, flipping halfway through, until heated through and crispy.

How to Make Santa Fe Egg Roll Wraps

Step 1: Combine the Santa Fe mixture

Santa Fe filling mixture in a mixing bowl

In a large mixing bowl, combine the cooked shredded chicken, black beans, corn, cheese, and taco seasoning.

Mix everything together until it is evenly coated in the taco seasoning and the filling looks well combined. If you like it extra cheesy, you can sprinkle in a little more Monterey jack.

Step 2: Build the wraps

Filling placed on an egg roll wrapper

Scoop about 1/3 cup of the chicken mixture onto the center of the wrapper. Spread the filling into a small rectangle, leaving about 1–1.5 inches of space from the left and right edges.

Using a pastry brush, apply egg wash across the top edge of the wrapper.

Wrapping and rolling the Santa Fe egg roll wrap

Fold in the left and right sides, then roll from the bottom toward the top, allowing the egg wash to seal the wrap.

Pro tip: Don’t overfill. A slightly smaller amount of filling makes tighter wraps that crisp up better and are less likely to split.

Step 3: Cook the wraps in the air fryer

Place the wraps in the air fryer basket in a single layer (leave a little space between them for airflow). Cook at 380°F for 6 minutes.

Flip at the halfway point and add time as needed until the wraps are crispy and browned to your liking. Since air fryers vary, you may need an extra 1–2 minutes.

Step 4: Make the boom boom sauce

Boom boom sauce ingredients mixed in a bowl

In a small bowl, combine the mayo, ketchup, sriracha, honey, and (optional) garlic powder and dried parsley. Stir until smooth and well combined.
