Easy Chicken Divan Recipe with Curry Rice
This is a simple chicken divan recipe with curry rice and broccoli. It is very similar to this old Chicken Broccoli Rice Bake recipe, but it has a little more of a tangy flavor.
One thing that I really love about this recipe (and basically all casseroles) is how big it is! It can serve around 10-12 people so it’s perfect for a party or for leftovers. Make some tonight and save the rest for lunch tomorrow!
And Chicken Divan is a classic recipe that never fails to delight! This version includes curry and lemon, to give it a little extra tang and zest! It’s my personal favorite!
This is the classic Chicken Divan recipe that we all grew up on. But now that we know better and watch more of what we consume, you can modify this recipe a little!
Low Fat Version of Chicken Divan
You can make this recipe more low fat by using low-fat sour cream (or non-fat plan greek yogurt), olive oil mayonnaise, and I would use our homemade Cream of Chicken soup recipe (it’s so much better when you have made from scratch cream of chicken soup!). These should all blend well nicely and clean up the recipe a little bit.
And instead of serving it with regular rice, you can whip up some Cauliflower Rice! Have you seen that Costco sells riced cauliflower in their veggie section? I’ve also come across the big bag of Green Giant Frozen Cauliflower rice. What a time saver! So make your own with this Cauliflower Rice recipe, or purchase the prepared stuff at Costco! In my opinion, it’s even better than real rice because the cauliflower compliments the broccoli so nicely!

Tangy Chicken Divan Recipe with Curry (Casserole)
Ingredients
- 1 ½ cups Broccoli Chopped
- 4 cups shredded chicken cooked
- 10 ¾ ounce can condensed cream of chicken soup
- 1 cup mayonnaise
- 1 cup sour cream
- 1 cup grated Cheddar Cheese
- 1 tablespoon fresh lemon juice
- 1 teaspoon curry powder
- 1 cup rice
- Salt and pepper
Instructions
- Cook chicken and shred.
- To prepare rice. Bring water and butter to boil, add rice and cover. Cover and place heat on low. Simmer for 20 minutes.
- Steam broccoli until tender.
- Shred cheese.
- Mix together rice, cream soup, mayonnaise, sour cream, lemon juice curry powder and salt/pepper. Add chicken/turkey and 1/2 cup of cheese.
- Place in 13×9 pan and add broccoli on top. Gently press broccoli into rice mixture. Top with cheese.
- Bake uncovered at 350°F/175°C for 20-25 minutes.
how much rice?
1cup of rice with 1 tablespoon of butter and 2 cups of water.
