“Cowboy casserole is a fast, inexpensive dinner idea. And I love that it is not the same old same old meal. The kids love it, and they can even make this themselves. Win for mom!”
— Cathy Yoder, The REAL Air Fryer Queen at Empowered Cooks

Cowboy casserole tastes like a cross between chili and cornbread in casserole form — hearty, filling, and budget-friendly enough that it costs just a few dollars per serving. If you’ve been wondering whether you can make a casserole in an air fryer, the answer is absolutely yes — and this recipe is proof.

What Is Cowboy Casserole?

Cowboy casserole is a budget-friendly, one-dish meal built on a base of ground meat, beans, and vegetables — all topped with cornbread and baked together until golden. It has roots in old-fashioned ranch cooking, where cooks made hearty, filling meals from whatever was on hand. This air fryer version keeps all that cozy flavor but skips the oven entirely, so you save time and keep the kitchen cool.

Ingredients for Air Fryer Cowboy Casserole

air fryer cowboy casserole ingredients including jiffy cornbread mix canned beans and shredded cheese
Here’s everything you’ll need. Most of it is already in your pantry:

  • 1 lb lean ground beef or turkey — lean is best (80/20 or leaner) so you’re not draining a lot of grease
  • ¼ cup diced yellow onion
  • ½ tsp kosher or sea salt
  • ¼ tsp black pepper
  • ½ cup frozen corn kernels
  • ¾ cup salsa — jarred works great; use mild, medium, or hot depending on your family’s heat preference
  • ½ can (about 7 oz) black, pinto, or white beans, rinsed and drained
  • ½ cup shredded cheddar cheese
  • 1 box Jiffy Cornbread Mix (plus the egg and milk called for on the box)

Ingredient tip: The salsa does a lot of heavy lifting in this recipe — it adds tomato, seasoning, and moisture all at once. A chunky salsa with good flavor will make the filling taste like it simmered for hours.

Equipment & Supplies

  • Air fryer (5–6 qt works well; Cathy uses a Cosori 5.8 qt)
  • Oven-safe baking dish that fits inside your air fryer basket — a 9×7 or similar size works well
  • Skillet for browning the beef on the stovetop
  • Mixing bowls

How to Make Air Fryer Cowboy Casserole

Step 1: Brown the Ground Beef

On the stovetop over medium-high heat, cook the ground beef with the diced onion, salt, and pepper until fully cooked through. Drain any excess grease. (Prefer to use your air fryer? Check out our air fryer ground beef tutorial for step-by-step instructions.)

Step 2: Build the Filling

Stir the frozen corn, salsa, and beans into the cooked beef until everything is evenly combined. The mixture should be saucy but not soupy.

Step 3: Mix the Cornbread Batter

Prepare the Jiffy Cornbread Mix according to the package directions (just egg and milk). If you prefer homemade, you can use half of this cornbread recipe from Mel’s Kitchen Cafe.

Step 4: Assemble the Casserole

layering beef mixture and cheese into baking dish before adding cornbread topping
Spray your oven-safe dish with nonstick spray. Add the beef mixture in an even layer, then scatter the shredded cheese over the top. Pour the cornbread batter over the cheese and spread it all the way to the edges so it bakes evenly.

Step 5: Air Fry

Place the dish in your air fryer basket. Cook at 330°F for 15–17 minutes, until the cornbread is cooked through and golden on top. If the edges start to brown too quickly before the center is set, loosely cover the dish with foil and continue cooking.
How to tell it’s done: Insert a toothpick into the center of the cornbread topping. It should come out clean with no wet batter.

Tips for the Best Air Fryer Cowboy Casserole

  • Don’t skip draining the beef. Extra grease will make the filling watery and prevent the cornbread from setting properly.
  • Spread the cornbread batter to the edges. If you leave gaps, the filling will bubble up around the sides and the cornbread won’t have a nice even crust.
  • Know your air fryer. Every air fryer runs a little differently. Start checking at 15 minutes and add time in 2-minute increments if needed.
  • Use a dish that fits. The baking dish needs to sit flat inside your basket with at least a small amount of airflow around the sides. A 9×7 dish works well in a 5.8 qt Cosori.
  • Season the filling. A pinch of cumin or chili powder added to the beef will take the flavor from good to great.

Variations & Substitutions

  • Protein swap: Ground turkey keeps it lighter and still tastes delicious. Ground chicken also works.
  • Bean options: Black, pinto, white, or kidney beans all work. Use whatever you have open.
  • Add seasoning: A teaspoon of cumin, chili powder, or smoked paprika adds a Tex-Mex kick.
  • Add veggies: Diced bell pepper, zucchini, or peas can all be stirred into the filling before assembling.
  • Spicy version: Use a hot salsa or stir in a small can of diced green chiles.
  • Make it vegetarian: Skip the meat entirely and double the beans, or use a plant-based ground crumble.
  • Cheese options: Swap cheddar for Mexican blend, Monterey Jack, or pepper jack for extra flavor.

Storage, Reheating & Freezing

Refrigerator: Let the casserole cool completely, then cover or transfer to an airtight container. It keeps well in the refrigerator for up to 5 days.
Reheating: Individual portions reheat well in the microwave in about 1–2 minutes. To bring back a crispier cornbread top, reheat in the air fryer at 350°F for 3–4 minutes.
Freezer: The cooked cornbread doesn’t freeze as well, but the meat filling freezes beautifully. Make a double batch of the beef mixture, freeze half in a freezer-safe bag for up to 3 months, and thaw it the night before you need a quick dinner. Then just add fresh cheese and cornbread batter, and cook as directed — you may need 2–3 extra minutes since the filling starts cold.

Frequently Asked Questions About Air Fryer Cowboy Casserole

Can you cook a casserole in an air fryer?

Yes! As long as you use an oven-safe dish that fits inside your air fryer basket with some clearance around the sides, casseroles cook beautifully. The circulating hot air mimics a convection oven and often cooks faster than a standard oven.

Can I bake this in the oven instead?

Absolutely. Bake at 375°F for 25–30 minutes or until the cornbread is fully cooked through and a toothpick inserted in the center comes out clean.

Can I use different beans?

Yes — pinto, white, kidney, or even chili beans all work well. Use whatever is in your pantry.

How do I make this vegetarian?

Omit the ground beef and double the beans, or use a plant-based ground crumble in its place. The rest of the recipe stays the same.

Can I make this ahead of time?

You can prep the beef filling up to a day in advance and store it covered in the refrigerator. When ready to cook, mix up the cornbread batter, assemble the casserole, and air fry as directed. You may need to add 2–3 extra minutes since the filling will be cold.

Can I freeze cowboy casserole?

The meat filling freezes well for up to 3 months. Freeze it without the cornbread topping for best results. Thaw overnight in the fridge, then assemble and cook fresh cornbread topping before serving.

What size dish fits in an air fryer for this recipe?

A 9×7-inch oven-safe baking dish fits well in a 5–6 qt air fryer. Make sure there’s a small gap between the dish and the basket walls so air can circulate properly.
