To prepare rice. Bring water and butter to boil, add rice and cover. Cover and place heat on low. Simmer for 20 minutes.
Steam broccoli until tender.
Shred cheese.
Mix together rice, cream soup, mayonnaise, sour cream, lemon juice curry powder and salt/pepper. Add chicken/turkey and 1/2 cup of cheese.
Place in 13×9 pan and add broccoli on top. Gently press broccoli into rice mixture. Top with cheese.
Bake uncovered at 350°F/175°C for 20-25 minutes.
Air Fryer
Prepare the casserole and assemble in an air fryer cake barrel or oven-safe dish that fits in your air fryer basket.
Bake in a preheated air fryer at 350°F/175°C for 12-15 minutes.
Notes
• If you prefer a crispier topping, add panko breadcrumbs mixed with a little melted butter before baking.
• Use freshly grated cheese for the best flavor and texture. Sharp cheddar or Gruyère work particularly well for adding depth and richness to the dish.
• Let the casserole rest for 5-10 minutes after baking to allow the flavors to meld and make serving easier. This also helps the casserole set, making it easier to cut and serve.
