  • Crispy, a delicious snack or in my case dinner. You can do the same thing with okra but swap out cornmeal for panko and skip the Parmesan. It was terrific!

  • Perfect recipe! I had a couple of eggplants to use and knew I had to disguise it for my family. These were so crispy with perfectly cooked eggplant centers. I omitted the red pepper flakes because my kids are sensitive to spicy foods, but I will include them (or a small dash of cayenne pepper) next time for a small kick of spice.

  • Are you supised to drain the sweat from the eggplant bites before coating them with egg?
