For this recipe, you will need:

  • 1 large eggplant
  • ¼ tsp sea salt
  • 2 cups panko crumbs or almond flour
  • ½ cup parmesan cheese, fresh or grated
  • 1 tablespoon Italian seasoning
  • 2 tsp garlic powder
  • 1 tsp sea salt
  • 1 pinch of red pepper flakes, optional
  • 2 eggs

This recipe is a breeze. After chopping the eggplant bites into cubes, set up a station for the egg wash and the breading mixture right next to each other. Then, take each of the cubes and dip them into the egg wash followed by the breading mixture. Make sure to cover each bite completely.

  • Crispy, a delicious snack or in my case dinner. You can do the same thing with okra but swap out cornmeal for panko and skip the Parmesan. It was terrific!
