Chicken Broccoli Rice – Freezer Meal
I always love a good freezer meal, and I was trying to make a few things to give a friend while she goes through a rough patch in her life. When I came across this casserole, it was perfect, as it was a recipe specific to a freezer meal! Â I altered it a bit, adding a bit more rice, chicken and broccoli, and using cream of celery instead of cream of chicken soup, since it already had chunks of chicken in it. Â It was easy to whip up, and even easier to store, and I am sure a breeze to cook up. Â Looking forward to a day when I don’t have to cook, just pop one of these bad boys in the oven!!
Makes 4 bags, each serves 4-5 for about $0.93/serving (less if you use only 4 cups of broccoli)
10 cups cooked rice (white or brown)
4 cups cooked chicken, chopped – ($4-5)
4 cups chopped broccoli, lightly steamed (can use frozen or fresh) – ($3.46, I used 2 bags as I wanted more broccoli)
2 cans cream of mushroom soup – ($1.70)
2 cans cream of chicken soup – ($1.72)
4 cups shredded cheddar cheese – ($2.00)
salt and pepper to taste
Combine all ingredients in a large bowl and mix well.
TO FREEZE:Â Divide into four ziptop freezer bags and seal tightly. Freeze flat.
TO SERVE:Â Thaw overnight (or for 8 hours) in the refrigerator. Dump into a greased casserole dish (each bag will fill an 8Ã—8-inch pan; two bags will fill a 9Ã—13-inch pan). Sprinkle with additional shredded cheese, if desired.
Bake at 350 degrees for 25-30 minutes, or until heated through and bubbly.
