Add 2 tablespoons cornstarch with 1/4 cup of cold water to make a cornstarch slurry and mix it into the teriyaki sauce.

Step 1: Cook Rice
To start, you want to get the rice cooked because this recipe comes together very quickly!
I like to cook the rice in the instant pot or a pressure cooker. You can also cook rice in a rice maker or on the stovetop.
How to cook rice in a pressure cooker:
Instant pot rice is easy! For this recipe I use
- 1 cup rice
- 1 1/4 cup water
Combine the rice and water together in the instant pot. Cook on high for 7 minutes and let the pressure cooker slow release for 10 minutes.
Step 2: Cook Chicken
Chicken thighs are so juicy and easy to cook in the air fryer. Here’s how:
- Cut the chicken into bite-sized pieces. Season with salt and pepper to your taste.
- Place the chicken in a bowl with the teriyaki sauce and onions. Stir to combine and coat everything.
- Place chicken and onions in the air fryer basket.
- Air fry at 380° F or 193° C for 8-10 minutes. Let the chicken rest in foil.
Step 3: Cook Broccoli
Frozen broccoli is the best in the air fryer! It is perfectly steamed and baked. Here is how you cook frozen broccoli in the air fryer.
1. Place the broccoli in the air fryer basket.
2. Cook frozen broccoli at 350°F/175°C for 10 minutes.

But, if you decide to half this recipe, and if your air fryer is big enough, you can cook the broccoli on one side of the air fryer basket and cook the chicken on the other side.
Do I have to use chicken thighs?
You can use any cut of part of the chicken to make this chicken teriyaki dinner! I like chicken thighs because they are juicy and tender. However, if you aren’t a fan, you can use chicken breasts instead.
