Parmesan Chicken

One Family

4 chicken breasts

1/2 c. melted butter

2 c. seasoned bread crumbs

1 1/2 c. mozzarella cheese

1 15 oz. can stewed tomatoes

1 c. Parmesan cheese

6 Families

24 chicken breasts

3 c. melted butter

12 c. seasoned bread crumbs

9 c. mozzarella cheese

90 oz. can stewed tomatoes

6 c. Parmesan cheese

Mix together Parmesan cheese and crumbs in a bowl. Mix eggs and butter in another bowl. Dip breast in egg mixture. Repeat with each breast. Sprinkle mozzarella over breasts and top with tomatoes. Cook frozen and covered with foil at 400 for 1 1/2 hours.

  1. Do you freeze this after it’s been cooked? If you do, then how do you reheat it?

  2. It mentions eggs in the directions, but not the ingredients list. How many eggs would you use for the single family meal?

  3. I would assume that you do cook it and then freeze it. To reheat it, I would probably cook it at 350 for a half hour, then check…you only have to cook it until heated well throughout since it’d be precooked. I would use probably 2 eggs. You can always add another egg if needed…

  4. Could someone please edit this recipe so it works and reads correctly? I really want to try this one, but I would really like to know the correct order of operations before trying it.

  5. I am reading this as a “prep” recipe. Take the chicken, dip it in the egg mixture, then in the parmesan/bread crumb mixture. Add cheese & tomato – then freeze without cooking, so next time you want Chicken Parm – just take out however many you want & cook them at 400 for 1 1/2 hours.

  6. however, it does state that you shouldn’t freeze raw eggs in the “foods that dont freeze” section. I would love to try this out–after some clarity has been provided :) Great website!

  7. I fixed this without any egg…just melted butter, then dredge in bread crumb mixture. Froze immediately, no pre cooking, then followed instructions for baking when ready. Cooked up beautifully and was very tasty!
