Chicken Caesar Pasta Salad Recipe (With Homemade Dressing)
Easy Chicken Caesar Pasta Salad with Homemade Caesar Dressing
This chicken caesar pasta salad is an awesome side dish salad to take to a potluck or serve at a BBQ. You will get a full 4-quart bowl of delicious pasta salad with this recipe. Perfect for a party or family gathering!
If you really want to step it up this recipe is even better when you can use fresh grape tomatoes and parsley from your garden. 😉
Homemade Caesar Dressing Recipe
I love the homemade Caesar dressing for this chicken pasta salad! In fact, I like to double the dressing and store the extra in an airtight container in the refrigerator for later.
This dressing is pretty simple and includes ingredients that you probably already have on hand. (I don’t usually want to deal with anchovy paste or raw eggs when it comes to homemade salad dressing.) I do like to use plain Greek yogurt in place of some of the mayonnaise though. Just whisk it all together and it is ready for the salad!
Note: You do not have to make the Caesar salad dressing from scratch, you can just use about 3/4 to 1 cup of your favorite. 🙂
Preparing Your Chicken
Cook up the chicken however you want – roast, grill, whatever. You can even buy pre-cooked chicken from the store and I won’t judge.
Final Thoughts
I can be pretty picky about pasta salads – there’s just something about cold pasta that isn’t appealing to me. BUT this salad is really quite delicious! I love it!
There’s some tang, there’s some salty – great flavors and textures all around. Plus, I mean, it has chicken and bacon – a few of my favorite salad ingredients. 😉
This recipe is adapted from Lauren’s Latest and Mel’s Kitchen Cafe.
I love this whisk – it is always the one I reach for!
