30-Minute Oven Breaded Pork Chops
Got pork chops and looking for a new way to prepare them? This oven breaded pork chop recipe is really worth a try! The pork is tender and moist, and the breading is crispy and flavorful. Plus, it is ready in 30 minutes! The whole family likes it too. My kind of dinner!
Melba Toast Breading
Using Melba toasts as the breading was new to me, but the experts at Cook’s Illustrated found that Ritz, bread crumbs, and cornflakes were too thin of a coating and not their favorite textures either.
Enter Melba toasts – with a hearty crunch, coarse crumb, and a subtle, toasted flavor. You can find them in the cracker aisle at most grocery stores, or you can even buy Melba toasts on Amazon.
Throw the Melba toasts into a resealable bag and use a mallet or rolling pin to crush them into coarse crumbs – size should range from sand to small pebbles. The Melba toasts really beat up my bag and even ripped a few small holes, so use a clean surface and know that you might have some escapee crumbs.
Prepare Your Breaded Pork Chops for the Oven
I use my hands to smother the pork chops in the 1/4 cup mayonnaise. Get a nice layer of it all over the chops, including the sides so you can get a thick coating of crumbs to adhere.
Baking the pork chops on a wire rack set in a rimmed baking sheet keeps the underside of the chops from getting soggy (a 12-inch by 17-inch cooling rack fits perfectly in my half sheet baking pans). No need to flip the chops either, just let them bake while you prepare the rest of the meal.

Crispy Oven Breaded Pork Chops Recipe
Ingredients
Breading
- 5 ounce box of Melba toast crushed coarse
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- ¼ teaspoon dried oregano
- ¼ teaspoon dried basil
- ⅛ teaspoon sugar
- 2 tablespoons mayonnaise
Pork
- 4 boneless pork chops 1 inch thick
- salt and pepper
- ¼ cup mayonnaise
Instructions
- Preheat oven to 425°F/220°C.
- In a shallow dish, mix together the Melba toast crumbs, 1/2 teaspoon salt, garlic powder, onion powder, paprika, basil, oregano, and sugar.
- Add 2 tablespoons of mayonnaise and work evenly into crumbs.
- Pat pork chops dry with a paper towel and season with salt and pepper.
- Cover chops completely with mayonnaise, the dredge thoroughly with Melba crumb mixture.
- Press on crumbs to adhere.
- Place breaded chops on a wire rack set on a rimmed baking sheet.
- Bake until coating is golden brown and centers of chops register 140 degrees on instant-read thermometer, 18-20 minutes. Remove from oven and let rest on rack until centers of chops read 150 degrees before serving, 5-10 minutes.
I tried this recipe last night for dinner. My family loved it. It was indeed crunchie and moist. Only tweek was I used vegetable ritz crackers instead of melba toast, and I added some chili spice dorito chips. I gave me the crunchyness and the spice.
