Ingredients and Supplies You’ll Need to Make Bacon Mozzarella Stuffed Chicken:
Ingredients:
- Chicken breasts
- Bacon, cooked and cut into bits
- BBQ seasoning, or to taste
- Mozzarella cheese, or to taste
- BBQ sauce, or to taste
Supplies
- Sharp knife
- Cutting board
- Tenderizer (optional)
- Oil sprayer
- Pastry brush or spoon
- Air fryer (Cosori Pro II)
Does the bacon need to be made in advance?
Yes for this recipe you will need to use precooked bacon for this recipe.
Not only does it allow you to make sure that the bacon is cooked properly, but it also allows you to have a nice crunchy bacon texture, rather than a softer soggier texture to the bacon.
You can make the bacon in the air fryer ahead of time too!
What is bbq seasoning?
Bbq seasoning is a great spice used to make and add flavor to your chicken dishes. You can find it in your local grocery store or buy it from amazon.

How to Make Bacon Mozzarella Stuffed Chicken:
Step 1: Cook the bacon
Cook the bacon in the air fryer or on the stovetop. Chop into bite-size pieces or bits.
Step 2: Prepare the chicken
Start by butterflying each chicken breast. If you have extra thick chicken breasts you can always flatten the chicken breasts to even thickness with a meat pounder, in between parchment paper or plastic wrap.
Then, spray the chicken breasts on the inside and outside with oil.
Now, season each butterflied chicken breast liberally with BBQ seasonings, making sure to get the inside and outside of each piece of chicken. Next, rub the seasoning into the chicken, this makes the seasoning penetrate the chicken better.
Step 3: Build the stuffed chicken entree
Once the chicken has been seasoned, add about 1/4 cup of mozzarella cheese to one side of each chicken breast.
Add the bacon bits on top of the cheese to each chicken breast. If you have leftover bacon bits, save them for topping later.
Fold the other side of the chicken breast over the cheese and bacon to close it. if the chicken isn’t staying closed, you can always use toothpicks to secure it.
Step 5: Air fry the stuffed chicken breasts
Place in the air fryer basket and cook for 13 minutes at 380 degrees F or 193 degrees C (flipping at the halfway point).
Remove the basket and brush or spoon on the bbq sauce, along with any extra cheese and bacon bits you’d like, and place the chicken back in the air fryer for another 3-5 minutes or until the chicken reaches the safe internal temperature and your desired doneness.

Equipment

Ingredients
- 2 Chicken breasts
- 5-6 slices Bacon, cooked and cut into bits
- 2 tbsp BBQ seasoning, or to taste
- ½ cup Mozzarella cheese, or to taste
- 1/4 cup BBQ sauce, or to taste
Instructions
- Cook the bacon in the air fryer or on the stove top. Chop into bite size pieces or bits.
- Butterfly cut each chicken breast. If needed, flatten the chicken breasts to even thickness with a meat pounder, in between parchment paper or plastic wrap.
- Spray the chicken breasts, inside and outside, with oil.
- Season liberally with BBQ seasonings, make sure to get the inside and outside of the chicken. Rub the seasoning into the chicken.
- Add about 1/4 cup of mozzarella cheese to one side of each chicken breast. Add the bacon bits to each chicken breast. If you have leftover bacon bits, save for topping later.
- Fold the other side of the chicken breast over the cheese and bacon to close it.
- Place in the air fryer basket and cook for 13 minutes at 380 °F (flipping at the half way point.)

We eat turkey bacon which we air fry first per the recipe. We undercook it a bit and then I just use salt, pepper and some garlic powder on the chicken. At the end I cover it with my homemade blackberry jalapeno BBQ sauce (which is also great with air fryer baked salmon). I am not a big chicken fan as we ate chicken so much when I was a kid, but air fryer chicken is brilliant. An now as an old broad we chose to eat red meat very infrequently for health and environmental reasons. This recipe is the bomb.
