Air Fryer Vegetarian Enchiladas
Boy are you going to absolutely die once you get a bite of these downright delicious Air Fryer Vegetarian Enchiladas.
While they might not have meat, they are still super filling and bursting with those tasty Mexican flavors that we all know and love.
Plus what is not to love about some veggies, rice, spices, and large tortillas doused in enchilada sauce?

Ingredients and Supplies You’ll Need to Make Air Fryer Vegetarian Enchiladas:
Ingredients:
- Uncooked rice
- Frozen peppers and onions
- Frozen corn
- Black beans, drained and washed
- Oil
- Enchilada sauce, divided
Seasoning Mixture:
- Cumin
- Smoked paprika
- Salt
- Garlic powder
- Cayenne
Enchiladas:
- Medium to large flour tortillas
- Monterey jack cheese, to taste
- Favorite enchilada toppings
Supplies
- Medium saucepan
- Small mixing bowl
- Medium mixing bowl
- Silicone pot
- Spatula
- Aluminum foil
- Oil Sprayer
- Air fryer (Cosori Pro II)
Can I add meat?
The cooking time given for this recipe is intended without meat. So, if you do choose to add meat to this recipe, make sure that you are using already cooked meat, as it will not come up to temperature for safe eating.
Shredded chicken, shredded beef, ground beef, and ground turkey would all be good options.
The best enchilada toppings
What I love about Mexican dishes is that you can make them your own, even by something as simple as choosing your own toppings to finish off the dish.
Here are a few of my favorite toppings to use for enchiladas:
- Cilantro
- Red onions
- Cheese
- Shredded lettuce
- Tomatoes
- Guacamole
- Salsa
- Pico de gallo
How to make Air Fryer Vegetarian Enchiladas:
Step 1: Make the rice
First, begin making the white rice according to the directions on the packaging.
Step 2: Mix seasonings
After you’ve started the rice, add the seasonings cumin, smoked paprika, salt, garlic powder, and cayenne to a small bowl and mix it all together.
Step 3: Warm veggie mix
Now, add the frozen peppers and onion, frozen corn, black beans, oil, 1/2 cup enchilada sauce, and seasoning mixture together in a small to medium bowl.
Stir until combined and evenly covered and then transfer the contents to a silicone pot.
Then, place the silicone pot in the air fryer basket and turn the air fryer on for 12 minutes at 370 degrees F or 188 degrees C, stirring contents every 4-5 minutes.
Continue cooking until the mixture is hot.
Step 4: Add in the rice
Combine the cooked rice with the bean and corn mixture together in a bowl, to taste, you may not need to use all of the rice.
Step 5: Build the enchiladas
Lay out the tortillas and add about 1/3 cup (or to taste) of the mixture to the center of a tortilla.
Roll up the tortillas and place the seam side down in a foil-lined air fryer basket.
Repeat until the air fryer basket is full of enchiladas (you may need to cook in batches).
Step 6: Cook the enchiladas
Spray the tops of the tortillas with oil and air fry at 370 degrees F or 188 degrees C for 3 minutes.
After the first cook time, top with enchilada sauce and Monterey jack cheese to taste (don’t use all of the remaining enchilada sauce if you are cooking in batches).
Air fry the enchiladas for an additional 2-3 minutes at 350 degrees F or 177 degrees C, or until the cheese is melted to your liking.
Remove from the air fryer basket and enjoy while the second batch is cooking.

Air Fryer Vegetarian Enchiladas
Equipment
- Medium saucepan
- Medium mixing bowl
- Silicone pot
- Spatula
- Oil sprayer
Ingredients
- 1 cup Uncooked riced Make according to directions
- 2 cups Frozen pepper and onions
- 1 cup Frozen corn
- 1 can Black beans Drained and washed
- 1 tbsp Oil
- 1 ½ cups Enchilada sauce divided
Seasoning Mixture:
- 2 tsp Cumin
- 2 tsp Smoked paprika
- 1 tsp Salt
- 1 tsp Garlic powder
- Cayenne a pinch
Enchiladas:
- 6-8 Flour tortillas Medium to large size
- 1-2 cups Monterey jack cheese to taste
- Favorite enchilada toppings
Instructions
- Cook the uncooked rice in 2 cups of water on the stove.
- Mix the seasonings together in a small bowl.
- Add the frozen peppers and onion, frozen corn, black beans, oil, 1/2 cup enchilada sauce, and seasoning mixture together in a small to medium bowl. Stir until combined and evenly covered.
- Transfer contents to a silicone pot.
- Place the silicone pot in the air fryer basket. Air fry for 12 minutes at 370 °F, stirring contents every 4-5 minutes. Continue cooking until mixture is hot.
