Try this healthy, filling, and delicious dinner idea!

This recipe is awesome! My husband even said this meal is probably in his top 5 favorite meals now! Whaa?! That’s a big deal. I have made a lot of different recipes over the years. The healthy aspect is not a selling point for him either (or the other people I served it to) – they are all about taste and they all loved it! In fact, they have requested that I make it again when we get together in a few weeks.

I’m usually not a huge fan of sweet potatoes, but they are really wonderful in this dish! I think the avocado and the avocado lime dressing are my favorite parts though. One of my husband’s comments about this taco bowl is that it is like a fiesta in his mouth. 😉

I totally forgot to add the cilantro to the dressing, but it still ended up being really good. This dressing would be a tasty, healthy option for any Mexican style salad!

With a bowl meal like this, you can arrange it beautifully in sections and everyone can just scoop up what they want for their own bowls or you can just mix it all together!

Taco Bowl with Avocado Lime Dressing Recipe

Prep Time: 15 mins | Cook Time: 35-40 mins
Yield: 6 cups | Serves: 4-6 servings


  • 2 sweet potatoes
  • 6 cups romaine lettuce, chopped
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • 1 cup brown rice, raw
  • 2 cups water
  • 1/2 cup frozen corn
  • 1 cup cherry tomatoes, halved (or diced tomato)
  • 1/2 medium red onion, chopped
  • 1 medium avocado, chopped
  • 1 medium lime, sliced into wedges
  • Avocado Lime Dressing

  • 1/8 cup lime juice
  • 1/3 cup water
  • 1 medium avocado
  • 2 tablespoons cilantro
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper


  1. Preheat oven to 400°F.
  2. Thoroughly wash the potatoes and cut them into 1 inch cubes. Arrange them on a baking sheet lined with parchment paper; sprinkle with sea salt and black pepper. Bake for 35-40 minutes, turning once half way through.
  3. While potatoes are cooking, cook rice according to package instructions.
  4. In a small pan bring 2 cups of water to a boil, then add frozen corn; lower heat and cook for 5 minutes, then drain. (Or heat corn in the microwave.) Fluff rice with a fork and fold in corn. Spoon the rice mix into 1/4 of a large serving bowl or platter, then add remaining ingredients as pictured.
  5. Add all dressing ingredients to a blender and blend until mixture is well combined and thin; add more water if needed. Drizzle over salad. Serve immediately.
