Looking for a quick summer lunch or dinner? You are in the right place! Today, I am excited to share with you this quick and easy air fryer dinner that is not only delicious, but healthy too! Everyone is going to love this turkey meatball sub recipe in the air fryer!
Turkey Meatballs Subs in the Air Fryer
I love this recipe because it is packed with fresh flavors. To make the turkey meatballs in the air fryer, you will need:
- 1 pound ground turkey or beef
- 1 garlic clove, minced
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp Italian seasoning
- 1/4 tsp pepper
- 1 egg, lightly beaten
- 1/2 cup lightly processed oatmeal
- pinch red pepper flakes
Step up this turkey meatball recipe with some fresh, summer vegetables. I like to serve my meatballs with bell peppers, mushrooms, and onions. But feel free to use whatever vegetables you love. To make your turkey meatballs into a sub sandwich, you are going to need:
- 1 bell pepper, thinly sliced
- ½ onion
- 2 cups mushrooms, halved
- ½ tsp kosher salt
- 6 Brioche buns
- Favorite white cheese (I used shredded mozzarella)
- Marinara sauce
- Fresh parsley, dill, or basil to finish
How to Cook Turkey Meatballs in the Air Fryer
To make your meatballs, first mix all the meatball ingredients together (ground turkey, garlic, onion, salt, Italian seasoning, pepper, egg, and lightly processed oatmeal). Mix until everything is well combined. Then, using a cookie scoop, form the meat mixture into meatballs. You should have anywhere between 15-18 meatballs.
How to Make Air Fryer Meatballs Subs
Now that you have meatballs, it is time to cook them in the air fryer basket. Lightly spray the air fryer basket, then place the meatballs inside. Place as many meatballs as you can without overcrowding the basket. This will depend on the size of your air fryer.
Next, if you choose to serve the meatballs with vegetables, place your cut vegetables (bell pepper, onion, and mushrooms) on top of and around the meatballs in the air fryer basket. Lightly spray the meatballs and vegetables with oil and season with ½ teaspoon of kosher salt. Close the air fryer basket, and let the meatballs cook for 10 minutes at 350˚F/177˚C.
Fresh Meatballs Subs in the Air Fryer
Your meatballs are finished once they reach an internal temperature of 165˚F/74˚C. At this point, remove the meatballs and the vegetables from the air fryer basket.
Now it is time to make your meatballs into sub sandwiches. Of course, if you don’t want to eat your turkey meatballs as a sub sandwich, then you can omit this part and top the meatballs with a white cheese of your choice. (You can melt the cheese in the air fryer for an additional 2-3 minutes).
Place three meatballs with the veggies inside a brioche bun. Top the bun with a mozzarella cheese (or a different cheese of your choice), and place the buns in the air fryer basket. Top with fresh dill, parsley, or basil. Cook for 1-3 more minutes, or until the buns are toasted and the cheese is melted.
Once everything is melted and toasted to your liking, these amazing sub sandwiches are done! Enjoy them with a marinara sauce and serve fresh!

Meatball ingredients
- 1 pound ground turkey or beef
- 1 garlic clove minced
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp italian seasoning
- ¼ tsp pepper
- 1 egg lightly beaten
- ½ cup lightly processed oatmeal
- pinch red pepper flakes
Other ingredients
- 1 bell pepper thinly sliced
- ½ onion
- 2 cups mushrooms halved
- ½ tsp kosher salt
- 6 Brioche buns
- Favorite white cheese I used shredded mozzarella
- Marinara sauce
- Fresh parsley dill, or basil to finish
Instructions
- Mix meatball ingredients together until well combined.
- Form meatballs using a cookie scoop.
- Lightly spray the air fryer basket with oil and place meatballs inside.
- Surround the meatballs with the bell pepper, onion, and mushrooms. Sprinkle on ½ teaspoon of kosher salt and lightly spray the veggies with oil.
- Cook the meatballs & veggies at 350˚F/177˚C for 10 minutes in the air fryer.
- Remove the meatballs & veggies from the air fryer basket.
- Place 3 meatballs in a brioche bun with your favorite white cheese and a drizzle of your favorite marinara sauce and mozzarella.
- Put the brioche bun with the meatballs back in the air fryer for about 1-2 minutes more to toast the bun and melt the cheese.
- Top with fresh parsley, dill, or basil and enjoy!

Holy moly, this was AMAZING! Skipped the onions and peppers this time but made my own sauce using a small can of tomato sauce doctored up, because I don’t have a large family. It was so good; I’m going to make a double batch next time so there are leftovers or some for the freezer.
